Green Dog Wine's Turkey Quinoa Stew

First off- thank you all for your awesome feedback on yesterdays post. I'm glad I'm not the only who can't use a round brush :)

Today was a longggg one! I had a 5 hour meeting that started at 11:30 and ran wayyy through lunch. I didn't realize it was going to be so long and didn't eat much of anything before hand! I was a starvin marvin by the time it was over and hogged down a flat out wrap with peanut butter before running to teach Body Step. The lack of food left my brain fogged up and I didn't teach very well. Sigh- you win some, you lose some ;)

Given this, I was soooo excited for dinner. When I saw Allison's recipe for Turkey Quinoa Stew, I knew I had to make it! I made a few changes and was just thrilled with the result. It was really thick and yummy. AWESOME recipe Allison!!

Ingredients:
Olive Oil
1/2 package lean ground turkey (approx 0.5 lbs, or use fake meat crumbles or leave it out and add more beans!)
1/2 onion chopped
1 packet taco seasoning (or any fun spices you have on hand)
1 can pinto beans
1 can kidney beans
frozen corn and peas
1 15-oz can chicken or veggie broth
1 15-oz can tomato sauce
1 tablespoon hot sauce
1/4 teaspoon red pepper flakes (or whatever spices you want!)
1 cup quinoa or quinoa mix

Directions:
In a large pot, add olive oil, onion, and turkey. Cook until turkey is no longer pink. Add beans, veggies, and taco seasoning. Make sure you coat all the vegetables really well. Once all the meat and veggies are coated, add remaining ingredients. Bring the whole pot to a boil, then cover, reduce heat, and simmer for 20 minutes, stirring occasionally.

Hands down: broccoli. Yum! Actually I like all veggies except mushrooms :P

That recipe looks so good! I might have to try that sometime (and it's another thing I can do with quinoa ;) ... thanks for sharing : )

wow, lets see- I literally love nearly all vegetables except corn and carrots.

Asparagus, Spinach, Artichokes, ooo Cabbage oh and Brussel Sprouts, those together with goddess dressing is insane! hmmm.. in the beta carotene section : sweet potatoes and pumpkin...
Cruciferous: kale and broccoli...

oh gosh. okay im done for now.
i love vegetables.

Ohoho what a great looking recipe! Must try that soon... I could never name just one favorite veggie though. Actually, yes I can - eggplant! Duh - I even posted an eggplant recipe I made TONIGHT! I must be tired.

i go through phases with my fave veggie. lately squash has been the front runner...but thats a seasonal one. summer time i could have corn on the cobb every SINGLE day!

that stew looks awesome btw. seriously, im totally full, but i still could go for a bowl or 2, or 8.

Oi that is such a HARD question! Can I give you favorite veggie(s)in color categories?
Green: Romaine lettuce, broccoli, peas, spinach, cucumbers
Orange: pumpkin, sweet potatoes, squash
Purple: eggplant and beets!
Brown: mushrooms

That looks like some good winter comfort food for sure - healthy too. Great recipe!

My favorite veggie - so difficult to choose just one. From the green family, a shout out to my beloved broccoli...You stink, but I love you so. To get my Vitamin A fix, I have to go with Mr. Sweet Potato Head. I like 'em baked in the oven - all ooey gooey and straight up plain. No butter or brown sugar for me, thanks!

Turkey quinoa stew sounds really, really good. Long meetings, not so much. My friend Raul swears by that quinoa mix.

i LOVE all veggies, but I think my favorite is broccoli. or maybe mushrooms. they both seem to get a bad reputation but i LIVE for them. mm mm mm!

Okay, just copied, pasted and printed off this recipe. :-) I've never tried quinoa and have wanted to for a long time...I think this is a perfect excuse to try it!

Hmmmm...I LOVE veggies, just am bad about eating them hahaha. My favorite would have to be asparagus (always have to look up the spelling) - I always get it when they have it on a menu at a restaurant!

Ugh don't you hate long meetings :( I think that the world should stop at noon so everyone can eat!

My fav veggie: that's so hard because I love 'em all (BUT CELERY YUCK!) mushrooms, carrots, and tomatoes seem to be the hits lately!

This could not have come at a better time! I pulled some ground chicken out of the freezer this morning to make pasta sauce but realized once at work that I used the last box of pasta on the weekend. I've been racking my brian all day trying to figure out how to use the meat. Now I have the perfect recipe! THANKS!!!

Hmmm favorite vegetable or vegetable I consume with alarming regularity? Probably broccoli if it's the later, but I adore green beans and carrots and artichoke hearts and spinach and all those other fun things too!
