Valentine's Day/Meat and Veggies

Hi Everyone! Hope you had a great weekend! Our weekend was pretty relaxing and a lot of fun. Last night we met my parents for dinner. Here are a few people pics from the event (sorry no food pics!). My parents crack me up:

And Josh and I:
Today I slept in! It was wonderful. Once I was up, I went for a 3 mile run and then worked on my push ups! I then ran a bundle of errands. For dinner tonight, Josh and I had very different meals. For him, I made a steak and brussels:

While I had a giant salad consisting of romaine, broccoli, broccoli slaw, almonds, cheese (part skim moz), brussels, tomatoes, balsamic vinegar and olive oil:

I am also in the process of making some oat bran cookies for Josh's lunches this week.

This week is going to be nuts, so you may be seeing a lot of quick meals. I have sort of be holding off sharing details on the craziness going on over here and I think I am finally ready to chat about it ;). KNOCK ON WOOD- Josh and I are closing on our house in SC on Friday and settling on the sale of our house in MD next week. HOPEFULLY everything will go well and things will go smoothly! Whats your week looking like?? Stressful? Busy? Easy?
Don't forget to enter the contest to win some wonderful Country Bob's All Purpose Sauce. You don't have to have a blog to enter! I'd love to hear from all the readers out there!!!!

Love it! Our dinners always look very different too. I do think women start out with an advantage- our hubbies don't have to worry about their diets now, but they will in a few years and it will be tough for them :-(

I hope you had a fun Vday with Josh and your parents!

My sister and brother in law live in Damascus, MD- I lived with them for a short while. Anyway, good luck with the business this week!

Congrats on the house! I know that's exciting, even if it's a bit overwhelming!

My week is going to be a crazy one, but I get to go to mardi gras in New Orleans on friday so I've got motivation to make it through!

That is AWESOME about your house(s)! What a crazy week but, whew, it'll be such a relief to have that all done.

That salad looks amazing!

My week is stacking up to be pretty busy...but I like it like that. As long as I can sleep in one weekend day! :-) Have a great Monday, girl.

Your parents are adorable, love your salad, it's definitely what I would have picked!

The second pict of your parents says a ton about their relationship. I love how one pict can say what years of writing cannot. Thanks for sharing your family us.

I had meatloaf and brussels just the other night. Never thought of tossing the leftovers in a salad. Thanks for the idea.

Yayy!! I love couple pictures! :) You and Josh are definitely soooo cute. This weeks is looking a little intimidating, with a giant feast-filled weekend coming up. And on a totally random note, I was wondering, as a fitness instructor, do you have tips on what's best to eat after a workout if your workout ends at like 10pm?

Your Mom & Dad are cute. I totally thought of you today when I was going go buy chicken. I was going to get the smaller pack that was already nice and tidy and waaay more $. I thought about what you said about cleaning the big guys once and having it all set when you want it. I bought the big pack and cleaned it all so now I'll just thaw it and I'm good to go. Thanks girlfriend.
