M: “Southern” Cinnamon-Pecan Coffee Cake & Stonyfield Yogurt

How has everyone’s weekend been? Any fun plans for the Super Bowl?

I plan on heading to my yoga studio today and take a nice, rejuvenating gentle session. I am in desperate need of some deep stretching. That coupled with my leftover cinnamon pecan coffee cake has already made my Sunday fantastic =) Oh, and football? Yep, I’m happy with this day! I’m going to be making a fun new dip recipe that I’ll be sharing as well a little later.

Ok, so this coffee cake – which, Laura, this is my answer to your cinnamon raisin bread challenge =) – the recipe came from my new favorite cookbook, Southern Cakes that my MIL was so sweet and mailed to me as a gift. (P.S. you can see all of the pieces of paper that I’ve bookmarked like 15 recipes I want to make already)

I am so excited to make more cakes from this book. I must say, this is by far the best coffee cake I’ve made yet. I followed a few of the baking pointers that Nancie outlined in the beginning of the book and I really think they made all the difference!

This book has seriously become one of my faves already! Just this coffee cake alone far exceeded my expectations! I really think I will use this cake recipe and mixing method for any variation of coffee cake.

Now, I don’t know if you remember reading about the sweet baby gifts that the nice people at Stonyfield sent to Erica. Well, since then the hubs and I have done a little Stonyfield sampling of our own of their whole milk yogurt (disclaimer: we received these products for free).

The hubs and I sampled the whole milk french vanilla and strawberries and cream. I don’t remember the last time I had whole milk yogurt, and this was such a yummy change! They were both super creamy and filling. The strawberries and cream tasted like…well…strawberries and cream! You could totally eat this along as a satisfying dessert!

The hubs and I spooned the french vanilla over top of a bowl of fresh cut up mixed fruit and it was perfection! A wonderful compliment to the fruit and almost reminded me of a yogurt fruit dip. These were both such a treat to have and stayed on our attempt to eat as much organic food and produce as we can!

I've tried almost all of Stonyfield's varieties EXCEPT the whole milk! I'll have to get to that next.

I absolutely LOVE coffee cake! It's such a fun anytime snack.

Yummm! After eating full fat/2% yogurt for so long now, I don't think i could ever stomach one of those yoplait lights again!

Those whole milk yogurt sounds so good right now! What a sweet MIL sending you that cookbook. I love coffee cake but haven't made it in so long. Coffee cake + yoga sounds like a pretty spectacular day to me too!

What a sweet and yummy post!! I am always up for desserts haha :-) And come to think of it, I'm not sure I've ever tried whole milk yogurt--it sounds like it'd be thick and delicious though!
