M: RR Recipe #3 and a Bushel o’ Muffins

Happy Friday Eve!! And thanks for the suggestions on the healthier desserts! I will definitely be trying some of those out!

Ok, so you know how I’ve been attempting to make all 10 of Rachael Ray’s top 10 recipes of 2010 – and I’ve done two now: the honey rosemary chicken and portabella cacciatore. Both were FANTASTIC.

This one, not so much. I tried the slow cooker Spanish-style chicken and it was sort of, meh. I’m not sure what it was, there just wasn’t much taste to it, and the raisin/roasted red pepper topping was a little weird for me.

So, fail #1, but that’s ok! I move on easily =)

Plus, I have these amazing muffins that I baked up for a group of co-workers. And, this is something definitely worth sharing!

I doubled miss Dawn’s recipe for blueberry muffins with crumbly topping. (p.s. these are the best blueberry muffins I’ve made, this recipe has been my go-to blueberry muffin recipe for a while now!)

Then I made up a batch of Monica’s apple cinnamon muffins. These are made with applesauce and chopped fresh apples and topped with a sprinkle of brown sugar…oh so good! These are the hub’s favorite.

muffins for me arent healthy :)
they can be for SURE but I tend to cram em with...the notsohealthy and call it a treat :)

Muffins are amazing! My mom has a great (super simple, I think 6 ingredient) blueberry muffin recipe. I made some orange poppyseed bran muffins the other week that were lovely. Most of the time I prefer a healthier muffin, but sometimes I like a more rich, sweet muffin for a treat :) Yours look wonderful! I will definitely check out those recipes.

haha...i've had some slow cooker disasters as well... and one had raisins in it! but i'm glad you have the muffins. you've sparked a craving in me!

LOL...I find a lot of RR recipes have ingredients that are just weird together...lol

OOOO...blueberry muffins...they look so good...I have blueberries in the fridge...might have to bake up a batch today...I have been on the hunt for the best blueberry muffin recipe...maybe my search has ended!

Those look fantastic! I have mad Anne P's (fannetastic food) banana muffins and they were TO DO FOR. So healthy and so delicious!

my fav muffin recipe is the apple cinnamon muffin recipe you sent me...the one with the crumb topping.

i love cinnamon raisin bread but never buy it. i challenge you to make some :) ...with icing :)

i'm never quite sure about the meat/raisin combo either. the muffins look awesome!

I don't usually make muffins...but I love them! When I do make them...usually just plain old blueberry. So good!
