E: Buffalo Turkey Nachos & More Nut Butter Chili

Halfway there! Hope your week is going well. I figured I would share two of the meals we enjoyed this week:

When Josh was leaving for work on Monday morning, I asked him what he wanted for dinner- chili or turkey meatloaf. His answer was meatloaf. As the day progressed….I decided meatloaf didn’t sound appealing. I thought back to this post on How Sweet It Is and knew what I was making!  I baked up tortilla chips using leftover tortillas from our weekend tacos. I then layered the chips with cooked ground turkey (buffalo sauce added while cooking), sharp cheddar cheese, additional buffalo sauce, and corn. Tuesday night called for chili. I have used Broccoli Hut’s PB chili recipe before and adjusted it to make enough for two.  Tonight, I adjusted it again and used almond butter instead of peanut butter. This makes three larger servings:

Ingredients

  • ~1-2 teaspoons olive oil
  • 1/4 white or yellow onion, diced
  • 1/2 cup tomato sauce
  • 1 1/2 cups cooked or canned black beans
  • 2 cups defrosted mixed veggies (I used corn, peas, green beans, lima beans & carrots)
  • 1/2 cup vegetable broth
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons almond butter

Directions

1. Over medium heat, cook onions in olive oil until tender.

2. Add tomato sauce, beans, mixed veggies, vegetable broth and spices. Bring to a simmer and cover. Cook for ~10-60 minutes (in my opinion, longer is better- brings out the flavor-but whatever you have time for).

3. Add almond butter, place a lid on the saucepan, and allow peanut flavor to infuse throughout the chili (5 minutes).

4. Remove lid, and stir thoroughly. Serve and enjoy!

Mmm, both recipes look awesome and just in time for Superbowl Sunday! It's funny how sometimes we just crave "dude food." Lately, I've been wanting to making sweet potato chili fries, I think they are from Jessica's blog as well. That girl knows how to make any man fall in love with her. ;)

I bet the nut butter in the chili is super delicious! I've made a chili that used peanuts & dried chilis to make the base and the flavor was superb - great way to change things up and add flavor!

I'm loving the looks of both of these recipes! I am guessing Josh wasn't too disapointed that you switched it up from meatloaf--meatloaf just has never been a favorite of mine. :-/

Both of those look amazing! Nachos are seriously one of the best foods - perfect for the super bowl!

Oh wow, do those nachos look fantastic! I love the idea of adding nut butter to chili -- I bet it adds a great hint of nuttiness without being overpowering!

I'm SO making these nachos - fabulous! I love you cooked the turkey with buffalo sauce - clever! This week I'm eating a few new curries and lots of risotto. Yum! I'm also making an Asian inspired recipe tonight for book club!

Mmmm....those nachos look yummy! I was just sitting here thinking of what to make for dinner later on and those look like they would hit the spot. Especially since it is so cold!

I haven't tried nut butter in chili. Have you ever used cocoa powder in chili? It adds a really nice depth of flavor.

I made a beef stroganoff and some crispy oven baked chicken strips ( on my blog today) and I want to make a lasagna. Kind of trapped today by the weather, and I have all the stuff for lasagna, so I am thinking tonight will be the night!

Hmmm... dinner this week, nothing out of this world exciting, but the tofu fried rice on Monday was pretty great!

It's interesting that you added nut butter to chili- I have never heard of that.

Some new foods I have had have been organic red quinoa topped with butternut squash. Something I just LOVE about the combo.

Wow those nachos looks so good! It has been forever since I have had nachos and your version looks so delicious. I love the hot wing sauce, my boyfriend would love that! Beans would be super good next time too.

I have always been curious as to how nut butter is in chili. Do you taste it a lot or does it just add creaminess?

BH is the best- she goes to the same school i just graduated from~! i made a huge amount of this pad thai style dish- noodles and veggies and beef with thai curry sauce and it was out of this world! I can't wait to post about it!

I crave nachos pretty often ( made some monday!) and added olives, black beans, tomatoes and cheese.

hahaha i love how you overuled josh! like NERP meatloaf it is not. i wonder if he came home thinking about meatloaf all day only to find that he got the meatloaf boot. although i'd be muchhh happier to come home to chili haha :) chili is also the perfect superbowl meaaaal!! wooo hoo for super bowl sundayy haha

Both meals look fabulous! I actually made chili on Wednesday. And on Monday I made a neat Asian chicken dish that was a hit around here...
