E: Buffalo Chicken & Artichoke Calzones

Side note: I had a wonderful day yesterday! I got to hear the baby’s heartbeat again at the doctors! I recorded a little segment (so I could send it to Josh) and have been playing it over and over ;). 

A while back, I cooked up buffalo chicken calzones. I decided it was about time I make them again, but I switched up the ingredient list a bit:

Ingredients:

  • 1 cup part- skim ricotta (or whole milk or fat free, whatever you’d like)
  • 1/4 cup granted romano parmesan
  • 1/2 cup pizza or tomato sauce
  • 3 tablespoons buffalo sauce (or a few shakes of hot sauce)
  • desired quantity cooked chicken (chopped) or deli sliced chicken breast (chopped) (I used Boar’s Head Buffalo chicken breast) (note: you could make a vegetarian version with black beans)
  • 1/2 a 15-ounce can quartered artichoke hearts (or leave out if you’re not an artichoke fan)
  • Pizza dough (homemade or store bought, I used Publix-store bought):

  • olive oil

Directions:

Preheat oven to 400 degrees F.

In a large bowl, mix together first six ingredients.

Roll out pizza dough and cut in half. Top each half of the dough with half of the filling, wrap up calzone and pinch shut.

Top a baking sheet with a piece of parchment paper (to catch any topping that explodes out). Place calzones on top of parchment paper and brush each with just a bit of olive oil. Bake for 20-24 minutes. The outcome:

How incredible that must have been for you guys. No wonder you could hear the heart beat, I bet this child's heart is so big!! :)

I am a die-hard buffalo sauce fan. It seems like buffalo chicken recipes are popping up in all different forms around the blog world. I just bookmarked a buffalo chicken soup, and now I am adding this to the line-up too!!

awe...isn't hearing the heartbeat great!? Being an L & D nurse for as long as I was...I think I have that sound ingrained into my head! haha I admit, when I was pregnant with my kids, I would always hook myself up to a monitor and listen to their heartbeats when it was slow....perks of the job! haha

i LOVE calzones! i havent had one in so so long! When they are fresh out of the oven and you break into one it is UNREAL the hot chese and delicious fillings! my favorite is spinach broc and cheese calzones!

I remember going into my sister's 1st ultrasound appt with her since her husband was deployed, and I cried more than she did!! haha

calzones always remind me of stromboli which reminds me of this AMAZING stromboli place that we used to order from (before it closed) called bootleggers and their stromboli was amazing and so much cheese and so spicy and the meaty one was SO meaty hahaha droooool

I really enjoy calzones but always seem to forget about making them. Today at work one of the chefs made one and it was so quick and easy I need to try it! This weekend I am laying low with now solid plans but dinner tomorrow with friends! Enjoy your weekend.

mmmm, love the calzones. the half open one is my favorite, it gives you a sneak peak of what's inside. don't you love that premade pizza crust? i buy some whenever i go to trader joe's!

Back when I had my daughter I had no health insurance, so I had only one ultrasound and she was turned the wrong way to tell if she was a boy or a girl, but I loved hearing "its" heart beat!

Tony's had a bit of a set back at the hospital - I will know more tomorrow. Enjoy your weekend and happy early b-day to your Momma!
