Easy Dinner Ideas & Vegetarian Brinner Bowl Part II

Thank you all for the feedback on your favorite easy & delicious meals.  Some of your brilliant ideas:

Last time, I posted about one of my favorite quick & easy vegetarian bowls and here is another:

Ingredients:

  • Chopped veggies (tonight I used parsnips, onions and green peppers)
  • Eggs (any combination of eggs, egg whites or egg beaters)
  • Chili powder
  • Shredded cheese (I usually use a part skim Mexican blend)
  • Salsa

Directions:

  • Spray frying pan with non-stick spray (or alternatively spread with a little butter or oil)
  • Add chopped veggies and chili powder and cook until veggies are starting to brown or are almost cooked through
  • Add eggs, cook through
  • Top with shredded cheese & salsa ( I like to add avocado too but I had none on hand)

Easy breakfast for dinner! I always serve this with a side of fruit and toasted bread, pita or tortilla.

What are your plans for the weekend?  I am teaching Body Step Saturday morning, going to dinner with friends & walking the bridge/going to brunch with Lindsay.  Josh and I also have plans for yard & house work. Enjoy every minute of your weekend!!

Love the easy breakfast for dinner and LOVE the new look - cute! :) I don't know that i'll be working out this weekend - maybe Sunday evening. We'll be in Auburn for the clemson game - I leave tonight - CAN'T WAIT!

I'm teaching Group Power tomorrow morning, then going for a run with a friend. Sunday morning is Team Challenge training and relaxing with my boys in the afternoon!

Great easy dinner ideas! I LOVE sweet potato and black bean chili (I think the recipe I have is from you!). I can't wait until the weather cools down a teensy bit so I can make it!

This weekend I'm doing Habitat for Humanity, going out for a friend's birthday, and the Colts game on Sunday! Have a great weekend, girl!

We make that dish all the time in my house. So easy to make and tastes really good. I like to add white pepper to the eggs while I'm cooking. I have a little obsession with white pepper lately:)

i LOVE eggy brinner bowls!! i also really love pancakes for dinner hahah as if you didn't know that already. my quick fix dinners usually involve a mass influx of roasted veg with some sort of fish and goat cheeeeeeeeeeeeeeeeeeeese :) hahaha typical julie.

I think "bowls" are my favorite meal in general. I serve my salads in a big bowl, stir fries, potatoes with veggies, etc. Chopsticks are often required with a bowl thought too.

Love the new look it looks great! Have fun walking and teaching.

You are so awesome for carrying around the stevia in your bag--I need to do that! NuNaturals is my favorite for liquid stevia:)
One of the sweetest things someone ever did for me is when Seth designed a shirt for me that had a picture of four things: an eye, a heart, a baby chick, and peas. Read it aloud and it says "I love chickpeas." Perf.

Happy Friday girl!
We're headed west to VA Tech to visit my little sister and watch the VA Tech/ECU game! After seeing JMU (where I went to school) upset VT and win last weekend it's going to be an interesting game with ECU vs. VT this weekend (the man went to ECU!) Either way I'm looking forward to the visit, I miss my sister! :)

This weekend is all about my folks - trying to teach them to cook and eat more healthily, as recent health struggles have mandated. No complaints, though - I love spreading the word about more holistic lifestyles.

I just made myself a quick veggie bowl for lunch...brown rice, raosted red pepper, cheese and a chopped up veggie dog. Delish!

Crazy weekend over here with a hockey AND soccer tournament. Thankfully they're both done now!!
