Stir Fry

Hi guys :) Sorry I went MIA yesterday! After work, I squeezed in a quick 6 mile run, an even quicker shower and then I headed out to a dinner with Josh's work. We went to a Greek restaurant and the food was VERY good. I had a ginormous Greek salad with fresh pita bread. Obviously, given the surroundings, I couldn't exactly whip out my camera ;) The coolest part of the dinner- I met a reader! Hi Michelle!!

Due to my OT the last couple days, I got to take most of today off. I used most of the day to play catch up. I got up at my usual time and headed to the gym for 20 minutes on the elliptical and Body Pump. The majority of the rest of the day was spent cleaning the whole house, doing laundry/ironing, getting my oil changed, and doing a little relaxing with the Frankster.

Tonight, I am headed to the cooking class I mentioned earlier in the week. We will be focusing on gnocchi and risotto. I will try and take lots of pictures (if I'm allowed). Since I'm leaving Josh by his lonesome, I threw him together a nice dinner to come home to -stir fry! This one contains ground turkey, water chestnuts, broccoli slaw, pineapple, leftover TJ's grain mixture, and stir fry sauce:


A sweet reader (Hi Melissa!) asked if I could post my typical day to day schedule. I will be putting this together and hope to have it up in the next post.

mm water chestnuts are so good, i dont eat them often enough! no idea about the menu. have a fun night!

I went to a risotto cooking class awhile back, it was so much fun! We learned how to make 5 different types.

I'm headed to a friend's house for ladies' night... its all about apples so it should be interesting.... we are trying to help her use some of the apples from her backyard!

Have fun tonight! I love cooking classes. I went to one last winter and am going to one when I am in LA in a few weeks :) I can't wait to hear all about yours!

My dinner was pretty lame, frozen pizza. However, I did have a fresh lemon cupcake I made, totally made up for the less than exciting dinner.

OMG I think its so funny you have a post with water chestnuts because I was just commenting on Kelly from Beneath it All's blog about how I don't like them. Its like a water chestnut night!

Mmm, Greek! We live in an area with a lot of Greek immigrants and I really don't take advantage of the cuisine enough.

I know this question is old, but... Ari is coming home tonight after 3 weeks away so, if he gets home early enough, we'll probably eat together!

Ohh cooking classes are so much fun! Can't wait to hear about yours.
I actually got hired by the Community Education board to teach about 10 classes in the home ec room this coming Jan-May! I am so pumped and just finished creating my classes :-)

I love when you say things like "squeeze in a 6 mile run," because it makes me feel like I should also be squeezing in running when I can! Even though I'm on a schedule, I always feel it's hard to fit it all in - and you make me realize it's entirely possibly!

Have fun at the class - it sounds fab! dinner tonight is chicken, brussels sprouts and cranberries, and mashed sweet potato. Its cold and rainy, so a thanksgiving type meal seems appropriate.

Have fun! I've always wanted to learn how to make gnocchi :D Stir fries containing pineapple and water chestnuts are a winner in my house ;) I ate dinner already (it's almost 11pm)- Greek wrap! Grilled chicken, salad and tzatziki in a wrap. Mmmm...

I love a good Greek salad with pita bread! It is so hard to find a good one though.
Lately (for the last 2 nights)we've been eating grilled chicken burritos with rice, caramelized onions, blue cheese and mushrooms. Did I make you hungry? LOL

Usually since dinner is cereal and a banana half the nights of the week, it might be better to say what lunch was haha

and it was a fantastic brown rice cali roll followed by a mashed banana with some plain yogurt and flax. Kind of an odd combination, but still yum all around.
