Grilling & Lighter Pasta

The whirlwind of a week continues! Here are a few pictures from our BBQ din din last night- My plate with tempeh (I enjoyed the taste of the tempeh, but the texture got a little funky when I was getting near the end), grilled squash, peaches, peppers and tomatoes:

He also tried the butternut squash bread and gave it a thumbs up! He said it is SUPER dense and moist (again, I think it will be better with applesauce vs. oil).

Work today was busy and I finally got my laptop back (hooray for the IT guys!!). After work, I did the usual dinner prep. I made a pasta mixture loosely based on this recipe with whole wheat spaghetti, asparagus, white beans, walnuts, parmesan cheese, fresh lemon juice and olive oil:

Now, I’m finishing up some house work and then heading out to teach step. We have another wedding (last one this season!!) this weekend but I am hoping to fit in posts between activities. I do apologize if I go a little MIA again. What are your weekend plans?

Busy Busy weekend planned! Saturday we are hitting the Farmers Market, Jodus has a hair cut, we are taking advantage of "Museum Day" (free admission) at the Seattle Art Museum, checking out a vintage store for a wedding dress for me, car shopping AND having guests over for lasagna dinner! *whew* Sunday will be a recovery day! haha.

ohhh that pasta salad looks so light and fresh! i love it! grilled fruit is also so yummy, the grill brings out such a different flavor. i have never worked with tempeh before, you are so adventurous!

We have a wedding this weekend too but it's in town this time :) Glad Josh liked the squash bread, it sounded awesome!

Oh! I never tried to grill peaches...sounds yummie, and the pasta looks terrific. light and yet tasty :-)

My weekend plans are to clean for hours and hours, visit Ikea, and go grocery shopping. Super exciting, huh?

I love grilled peaches. Add a dollop of yogurt and a sprinkle of granola and it's like cobbler ala mode.

does the tempeh really have that funky of a texture? oh I didn't want to hear that. love that you call it din din. LOL We have no wedding this weekend, but a date with sushi (and laundry, booo)

It's wedding season! We had 6 this year and have our last one in a few weeks. Thank goodness! ;)

The tempeh is definitely different and takes some getting use to. I actually perfer it cold and usually have it on salads for lunch.

I have half a can of white beans sitting in my fridge & have been looking for a way to use em'--never even thought of throwing them in a pasta dish!!

It is going to be a busy weekend at our house. Tonight is date night with the hubby followed by a super quick clean of the house. On Saturday, my hubby, Dad and myself are going to my college Alma Mater for a football game. Sunday will be church, lunch with hubby's family, and the children's drama at church Sunday night. And somewhere in there I need to squeeze in at least 1 workout and a visit to snuggle my baby niece.

ugh grilled food is soooo good! and I dont have a grill! i mean a g. foreman, but really now! it's not the same!!

tempeh def. takes getting used to! it has a funky flavor and def. needs a lot of marinating..........or something! ha!

Ohhh your pasta salad looks yummy. I love the flavor and texture of tempeh, it's so nutty. I haven't cooked with it in a while, but I love to stir fry it with veggies and teriyaki sauce over rice. Super yum!

So, what is that - your 500th wedding this year? ;) I'm in baby shower season myself. The invitations are arriving in the mailbox all the time. CD refers to them as bills. Hehe.

Love the idea of grilled peaches. That sounds so good, especially with the BBQ chicken. What a lovely southern dinner!
