Simple Shrimpy Dinner

Thank you all for your sweet comments on the wedding pictures I posted yesterday! You are all wayyy too wonderful :)

Today was one heck of a busy day. Work was out of control! When the day was over, I coudln't wait to get into the gym. I ran two miles and then took a great 45 minute spin class. I came home to get some more work done and do some laundry/ironing. For dinner, I wanted something simple and delicious. Here is the view via Josh's plate.

Shrimp cooked with a hint of olive oil, lemon juice, and old bay:

TJ's grains:

Pineapple:

Roasted butternut squash:

All together now:

And now its back to work! Hopefully this will mean a shorter day Wednesday ;)

Any exciting events this upcoming week? I have a fancy pancy dinner with Josh's work tomorrow, a cooking glass (gnocchi and risotto) on Wednesday, and my 10k Saturday!

Your dinner looks delicious! I love simply-cooked shrimp more than just about any other food.

My baby sister turns 18 this weekend, and I'm in charge of party planning. I'm excited, but sort of sad that she's gettign so old.

If I were to do that run PLUS spinning, I'd be a zombie. How do you keep your energy up? The food looks awesome, but I'd be dragging and would need to get real carby. Am I just old or something? (sigh)

Those grains from TJ's look good. I must try them now.
This week is all about the gym. Just me and the gym. I've made it up to 200 sit ups and I'm oh so proud of that. I know you can relate.I'm such a gym-junkie.

You always get a ton of stuff done in your day!! It's inspiring! Would you be willing to post a typical timeline? I'm always curious...wonder what time she goes to work, what times does she get home, how does she do it all...

;-)

Melissa- hey girl :) Great question. I will put this up in my next post

This is a random question but what kind of plates are those? We have very similar ones except they're an orangey/yellow.

Anyway, sorry work was crazy!! Sounds like a lot of exciting things are in store for you this week. Mine won't be that exciting I don't think! Next week will though :)

That shrimp looks heavenly. I'm jealous! (such a lack of good seafood in college)

The cooking class sounds like a lot of fun. I love risottos, but I usually only stick to one variation (straight up sauteed onions and garlic with some broccoli and red bells thrown in?) Do you have any suggestions for add ins?

I'm VERY excited for you for your cooking class! That's like THE cutest couple thing to do in the world.

have fun girl!

Aurora has been my favorite princess forever. That picture of me when I was little is an Aurora dress my mom made me that I wore for four halloweens in a row--even though by the last halloween, the sleeves were halfway up my arms and the hem barely came to my knees!

all my favourite foods in one meal- love it :D Cooking class sounds great! My exciting plans are flying to NY!

Yum, your shrimpy looks delish (and perfectly balanced!). I was just looking at the wedding pictures and it looks like you had a great time. I am in LOVE with your blue dress, you look so pretty in it!

Sometimes simple is the best. I've had a seafood craving lately - I need to buy some to cook this weekend (or I should say, buy some so the husband can cook it this weekend)!

Good luck on your 10k this weekend! No exciting plans for us, which is perfectly fine with me :)

ooh, sounds like some fun events!

I have a 5K on Saturday, so we'll be racing together :) It's my first 5K in almost a year and the same COURSE as my very first one 1.5 years ago. I can't wait to see my time difference.

Other than that, just a lot of cooking and football. Just the way I like it :)
