Today was one heck of a busy day. Work was out of control! When the day was over, I coudln't wait to get into the gym. I ran two miles and then took a great 45 minute spin class. I came home to get some more work done and do some laundry/ironing. For dinner, I wanted something simple and delicious. Here is the view via Josh's plate.
Shrimp cooked with a hint of olive oil, lemon juice, and old bay:
TJ's grains:
Pineapple:
Roasted butternut squash:
All together now:
And now its back to work! Hopefully this will mean a shorter day Wednesday ;)
Any exciting events this upcoming week? I have a fancy pancy dinner with Josh's work tomorrow, a cooking glass (gnocchi and risotto) on Wednesday, and my 10k Saturday!

Your dinner looks delicious! I love simply-cooked shrimp more than just about any other food.
My baby sister turns 18 this weekend, and I'm in charge of party planning. I'm excited, but sort of sad that she's gettign so old.
Your dinner looks so yummy! it's been way too long since I've had shrimp. Sounds like an exciting week!
Ooh! Jealous you are taking a cooking class! I've been wanting to do that for some time now!

Well aside from getting back to my blog... oopsie, the 5K i'm planing is THIS Saturday. I have such a greater appreciation now for race directors!

I spy Israeli couscous?!?! Yummy dinner, can't wait to hear about the cooking class too!
The colors in this meal coordinate so well!
YUM! Can you come make me dinner? I'll even take your leftovers! Seriously, my dinner tonight is going to be half a bottle of merlot if you don't come quick! Just kidding. Love your post! And how fun on the class!
you have some exciting stuff coming up! Sounds like a blast.
A cookin class sounds like fun! I saw the schedule for the classes at Williams and Sonoma today...not something that fits into the budget. sigh
Yum, girl! Dinner looks fabulous. I especially like the looks of those grains and shrimp : )
Have fun at your fancy pancy dinner!!
sorry to hear that your work week is already insane. Hope it calms down a bit but it sounds like you have some great things to look forward to this week.

Love that mix from TJ's!! Shrimp looked simply delish!
Good luck with the 10k
Wow that dinner looks amazing! I love every single ingredient!
I have been eating soo much squash lately! I love every kind, but butternut is definitely my favorite for making fries! This meal looks scrumptious!
Simple - and delicious. Great combo flavors!
If I were to do that run PLUS spinning, I'd be a zombie. How do you keep your energy up? The food looks awesome, but I'd be dragging and would need to get real carby. Am I just old or something? (sigh)
Those grains from TJ's look good. I must try them now.
This week is all about the gym. Just me and the gym. I've made it up to 200 sit ups and I'm oh so proud of that. I know you can relate.I'm such a gym-junkie.
Everything looks delicious but the grains from TJ's are one of my favorites.
mmmm. old bay makes so many things better! good luck in your 10k!!

good luck with your taper week before the 10k. it is great to have things to look forward to!!
You always get a ton of stuff done in your day!! It's inspiring! Would you be willing to post a typical timeline? I'm always curious...wonder what time she goes to work, what times does she get home, how does she do it all...
;-)
Melissa- hey girl :) Great question. I will put this up in my next post
That is so, SO my kind of dinner!
My birthday is on Saturday and Ari will be coming home after being away for 3 weeks... that's pretty exciting for me!
That is one heck of a tasty looking dinner!
You're going to learn how to make gnocchi? How fun!
Your shrimp look awesome. I have to admit, mine were store bought, pre-seasoned :)
mm I've been eating shrimp all week and it feels so decadent, i love it!!
don't forget to checkout my yummy salsa giveaway http://runtothefinish.blogspot.com/2009/09/salsa-dancing.html
This is a random question but what kind of plates are those? We have very similar ones except they're an orangey/yellow.
Anyway, sorry work was crazy!! Sounds like a lot of exciting things are in store for you this week. Mine won't be that exciting I don't think! Next week will though :)
That shrimp looks heavenly. I'm jealous! (such a lack of good seafood in college)
The cooking class sounds like a lot of fun. I love risottos, but I usually only stick to one variation (straight up sauteed onions and garlic with some broccoli and red bells thrown in?) Do you have any suggestions for add ins?
I'm VERY excited for you for your cooking class! That's like THE cutest couple thing to do in the world.
have fun girl!
A cooking class?? THAT is exciting. I've always wanted to try one. You're gonna share your new mad skizzles, right? ;) Way to get your Italy on!
I love anything with shrimps. This looks infinitely delicious!
This is the kind of dinner that I like, simple and delicious...enjoy planning the party for your sis :-)
You love your shrimp, huh? :)
You have a busy week. Have fun with it all. We got back from CA last night. I need to do laundry and unpack-fun times:)
Aurora has been my favorite princess forever. That picture of me when I was little is an Aurora dress my mom made me that I wore for four halloweens in a row--even though by the last halloween, the sleeves were halfway up my arms and the hem barely came to my knees!
all my favourite foods in one meal- love it :D Cooking class sounds great! My exciting plans are flying to NY!
anything with shrimp ends up being such a protein packed delicious meal! love it. i am going to lake powell this week, weeee!
What a great dinner! So simple and delicious! You have a nice upcoming week! We've got puppy school and a flag football game, then my MIL will be visiting over the weekend. Have a great week!
Yum, your shrimpy looks delish (and perfectly balanced!). I was just looking at the wedding pictures and it looks like you had a great time. I am in LOVE with your blue dress, you look so pretty in it!
Sometimes simple is the best. I've had a seafood craving lately - I need to buy some to cook this weekend (or I should say, buy some so the husband can cook it this weekend)!
Good luck on your 10k this weekend! No exciting plans for us, which is perfectly fine with me :)
i am loving the shrimpies...that makes me want some for dinner myself!
mmmm, i love the shrimp, i'll take the whole plate to go!
ooh, sounds like some fun events!
I have a 5K on Saturday, so we'll be racing together :) It's my first 5K in almost a year and the same COURSE as my very first one 1.5 years ago. I can't wait to see my time difference.
Other than that, just a lot of cooking and football. Just the way I like it :)
TJs grains look amazing! What a perfect dinner! Good luck on your 10k!
