Another lighter pasta- Cauliflower Spinach Pasta

Is it really only 8 pm? I am so ready for bed ;)

Today work was great! I got an award for some of the work I recently completed which felt great! I came home, took the Frankster for his walk, did some laundry, cooked up dinner and then headed out the door to teach Body Step. When I came home I ate, showered and am all nice and tucked in now ;). I have a few more to dos, but hopefully they won't take too long. For dinner I made another light pasta. It was very yummy except I over-roasted my cauliflower a bit. Next time I will do it on a slightly lower temp such as the one in the following recipe:

Ingredients:
1 head cauliflower
About 3/4 box/bag of pasta (whatever you have)
About 2 cups fresh baby spinach- sliced up thin (I cut mine with freshly washed scissors)
1/3 cup Parmesan cheese
1/3 cup bread crumbs (I used Panko)
Olive Oil
Salt, Pepper, Garlic powder

Directions
Preheat oven to 425. Cut up cauliflower into bite sized pieces and cover lightly with olive oil, salt, pepper, garlic powder (your call on the amounts here ;)). Place on a cookie sheet and roast in the oven for 20 minutes turning once (all ovens are different so keep an eye on them so you don't over do it like I did ;)).

Meanwhile, heat up a pot of water and cook pasta according to directions. Set aside 1/2 cup of pasta water and drain pasta, return to pan, add spinach and mix. Add pasta water, cheese, panko, and cauliflower. Mix well and serve.


It was very good. Even with the over-roasted cauliflower. Have you ever had a major cooking disaster???

Ooooh yes, I've DEFINITELY had kitchen disasters, haha - I prefer not to think about them ;-)

sounds like a great day, congratulations on your work award that's so cool. That pasta looks divine, i kinda like my cauliflower a little burnt-so it looks even more delicious to me (lol i'm weird) As for cooking disasters there's one that sticks out the worst, it was the most horrible meal i've ever made, dry, disgusting rice, very unappetizing broccoli and beans that were burnt!

Oh yes I have...my friend once gave me this recipe for soup and you had to blend all the ingredients together. I think I added way too much stuff because everything went everywhere!!!

Most of my major cooking accidents have involved oats and a microwave...

... but there was that one time with baked cod in the oven... with a plastic bowl... that caught on fire.... and we had to um... call the fire department. yep. college days.

i am sooo ready for bed too. i haven't had many kitchen disasters but i usually always make the kitchen a disaster whenever i do major cooking. i wsih there were some instant cleanup thing!

So, my kitchen disaster, this was horrible, my newly married niece was over for a "cooking lesson"...well, we got to drinking a little while we were cooking and I was preheating a skillet and forgot about it, well, when I added the oil to the skillet it caught on FIRE! no joke...tall flames, they almost touched my cabinets. I almost threw the pot in the pool...it was crazy. (and the guys were innocently watching basketball in the living room when this happened...talk about freaking everyone out!). Very embarrassing!!

wow, totally had a gazillion kitchen disasters. Where to start.
I tried making the pumpkin egg combo I usually do for breakfast and I accidentally dumped about 1/4 cup of baking powder in it due to slip of the wrist. I dumped out what I could but it tasted AWFUL!

I definitely think that pasta looks amazing. I've had several kitchen disasters in my lifetime. The ones that always make me the saddest are when oatmeal explodes in the microwave :o( So I always cook on the stove, haha!

It still looks pretty tasty. Once I burned brownies AFTER I took them out of the oven. (I left a burner on the stove on -- doh!)

I never made pasta with cauliflower.. I do not know why. An inspiration to do it now!

BTW I had no clue u get the Jenne o burger patties too. I buy the turkey hotdogs as we do not eat any other meat than poultry. I have to look for these.

When I have a kitchen disaster, I try to fashion the dish into something else. I hate to throw anything out.

This sounds delicious. I made pasta and cauliflower together for the first time a few months ago and it was yummy. A great way to bulk up the pasta so it's a healthier meal. Can't wait to try this version.
