Stuffed Potatoes and Apple bars

This Monday went by quick! Work went well. Tonight, I took Body Pump and had a fabulous workout! The whole moving thing (2 1/2 weeks go!!) is starting to stress me out a bit. I decided to push all my stress into my workout and I think the results were great! I felt awesome after! When I got home, I made some breakfast/dessert treats (recipe below) for Josh and washed the dog. Tonight for dinner, I made stuffed potatoes! I cooked up 2 potatoes (a sweet potato for me and a regular Idaho for Josh) at 425 for 1 hour. I also baked up some chicken. On the stove top, I did the following:

Ingredients

1 15-ounce can black beans, drained
1 8-ounce can no salt added tomato sauce
desired amount of Frozen corn
1 tsp ground cumin
1 tsp chili powder

Directions

Bring all ingredients to a boil. Reduce heat, simmer for 10 minutes.

I then topped the potatoes with the above mixture and a little low sodium Provolone cheese. I also topped Josh's with the chicken. The above recipe is an adjusted version of this recipe.
The breakfast/treat recipe that I made today was apple bars! I had a lot of apples in our fruit bowl and I saw that a lot of bloggers had gone apple picking this weekend (i.e. Sammie and Bridget) , so I thought it would be perfect. I was inspired by this recipe, but adjusted it quite a bit:

Ingredients:
5 cups tart apples, cored, peeled, chopped
3/4 cup sugar
1/2 cup slivered almonds
1/4 cup vegetable oil
2 teaspoons vanilla
1 egg, beaten
1 cup all-purpose flour
2/3 cups whole wheat flour
1 cup rolled oats
1-1/2 teaspoon baking soda
2 teaspoons ground cinnamon

Directions:
Mix chopped apples, sugar, and almonds. Let sit for 30 minutes- 2 hours.

Add vegetable oil, egg, and vanilla. In a seperate bowl, mix dry ingredients. Mix wet and dry ingredients together:


Place in Pyrex dish:
Bake at 350 for 40 minutes. Let the bars completely cool, cut into individual servings. Store in fridge:


In other exciting news, I found these cool arnold rolls at the store this weekend. I am going to use them in Josh's lunch tomorrow and will let you know what he thinks about them!!

Arnold Select Sandwich Thins?! If I didn't know any better I'd say it was my host-mom's favorite bread from the bakery at Santa Isabel, looks exactly the same! And I hope for you that it tastes just as good :)

Dinner and dessert sounds, looks, (tastes, I will one day when I use the recipes) divine!

Mmm sweet potatoes!

I have those rolls! I like them lots. The are only 100 cals so that's the upshot. Not the most "natural" thing in the world, but tasty.

Oh let us know how those bars tatse they look great and they go along with the Blogger Challenge this week from Care to Eat!

I use those sandwhich flats all the time.. they come in multigrain and whole grain.. they are perfect with a little TJ's jelly for a pre exercise snack!

You have been busy, busy cooking up a storm and having a blast with friends! It looks like so much fun!

1) I love the platter you made for your friend! She is one lucky gal to get some of Erica's yummy baked treats!

2) There is NOTHING better than chili and cornbread with football. Nothing!

3) I love the stuffed potato recipe! It's definitely going to be a favorite of mine heading into these cold winter months. Potatoes are going to be a staple, I can feel it.

I'm drowning in apples after my trip to the orchard, so this recipe is so timely - I hope I can get home from work at a decent time to try to make a vegan version!
Oh, I've had the Arnold Select Sandwich Thins in the 100% whole wheat variety, and I love them. Interestingly, I'm not crazy about them toasted, but just regular room-temp as a sandwich is delicious!
