MIA/Meals

Hi All! Sorry I have been semi-MIA! I had a busy end of the week/weekend! Here is a quick overview and then some pretty meal pictures/recipe links:

Tuesday: Work, Gave Frank a bath, Taught Body attack, Sloppy Janes for dinner. Josh had a melty version with cheese on top of Arnold's thins:

While Jenny and I topped our salads with the sloppy Janes:

Wednesday: Body Pump, Work, Errands, random leftovers dinner
Thursday: Work, Ran 6 miles with Jenny, prepped for our trip (packing, etc), our friend Jeremy came over for dinner. The boys had mini burgers and we all shared corn on the cob, salads, and this lovely appetizer that Jenny made- crab mixed with seasoning and a little bread crumb in hard boiled egg whites:

Friday-Sunday: Josh and I drove to Rehoboth Beach, DE for a wedding this weekend. The drive took 11 hours there and 10 hours on the way back. It was a longgggggggggg trip but we had a blast! I will post some wedding pictures later this week.
When we got back last night, I threw in some laundry, cleaned up the house a bit, and made dinner. I made Aggie's Crispy Fish Fingers:



And cooked up some squash and brussel sprouts:


It was light and delicious and EXACTLY what I needed after a long car ride. How was your weekend? What did you do?

Cauliflower & Squash Mac N Cheese

Ok, so we made it through Monday :) Hope yours treated you well! I had a busy day at work, so the day really flew. When I got home, I did a bundle of cleaning/house work and then Jenny and I headed out for a run. We were a little nervous because it was around 90 degrees out, but it turned out there was a nice breeze and we easily hammered out 6 miles!

When we got in, I started on dinner- Ellie Krieger's Macaroni and 4 Cheeses (I call it Squash Mac N Cheese). I made a few adjustments:
  • I used skim milk instead of 1% (its what we had!)
  • I used 6 oz of 2% milk Cheddar (instead of 4 ounces of full fat Cheddar and 2 ounces Monterrey Jack)
  • I did not add salt or mustard
  • I added extra cayenne pepper
  • And I added a bundle of cauliflower to the mix

The result:



So good- one of my favorite dinners for sure.

I also received a package of Zoe bars and an adorable card from the wonderful Bridget of Yogurt and Berries!! I am super excited to try them. Thank you Bridget!
