Weekend & Overnight Slow Cooker Oatmeal

I hope you all had a wonderful weekend! Ours was family filled again! A few highlights- lots of walks and a couple runs:

Tried the FAMOUS coconut cake from Peninsula Grill (I thought it was pretty good…but I’m not a huge cake person, others in our group thought it was truly amazing!!):

And now, onto more food! Mmmm…oatmeal. So comforting in the morning. As much as I enjoy a morning bowl, sometimes I wish it was just ready when I woke up (I know…it doesn’t take that long to cook, but…)

This month, I was assigned Alli-n-Sons blog. Alli is the Mom of two boys. As she notes, she is also a “wanna-be photographer, aspiring baker of all things chocolate and creative woman, all rolled into one.” She has so many fabulous recipes on her blog, but her overnight slow cooker oatmeal called out to me right away. I followed her directions almost exactly. My only two notes is that I would NOT use more than 2 cups of oats and that my slow cooker only needed 6 hours on low to do the trick. I used a combination of multigrain and traditional oats (please excuse the photos- it was EARLY and a rainy, rainy day):

After six hours, the oatmeal was ready and smelled amazing:

The swimming pictures are so great! Glad you had a fun weekend - pretty toes, too. :)

That oatmeal looks/sounds amazing. YUM. And I have to say, I might be craving that coconut cake as I type this!

I've had that coconut cake. It's so dense and heavy, but it is pretty good. Charleston seems to have a cult following for it and pay something crazy like $11 per slice.


I do oatmeal in a slow cooker for my office sometimes...they LOVE it.

I may try this in my itty bitty crock since I love oatmeal, but seem to be the only one! And $12 for cake...I know you're in the South! That sounds like Memphis too! I keep saying I need to get in the layer cake biz, these crazy people pay$45 for a cake!

I love the idea of slow cooker oatmeal, but I'm just not that big a fan of oatmeal in general. Definitely more of a cold cereal girl myself; however, I love your suggestion to top the oatmeal with just about anything. I like to get creative with my bowl of Kellogg's FiberPlus cereal too. Such a great way to incorporate even more nutritious foods to your meal.

That's insane....I have never actually bought the cake everyone here goes nuts over, Strawberry, I wonder how outrageous it is? I thought $45 for a cake was a lot!

Coconut cake is my favorite...I'm putting that on my list next time we're in Charleston-- I have fond memories of Peninsula Grill from when my parents would come to visit when I was at CofC :-)

Sounds like a terrific weekend, Erica! I've made steel cut oats overnight in the slow cooker a la Alton Brown, and they were delicious!

My daughter was a total fish when she was little - when I dropped her off at her first summer day camp, I told the instructors - make sure she stays in the shallow end - I am not a swimmer at all! Imagine my surprise when a month later they had an open house and Hannah got up on the diving board and jumped in and swam to the side all by herself - she's been swimming ever since. :D She did sleep like a baby after though

My fiance and I have just recently started eating healthier and we've been making oatmeal for breakfast. I hate how long oats can take on the stove so I will DEFINITELY be trying this out! Would be so nice to have breakfast ready when I get up :)

I have heard about overnight oatmeal alot lately and it looks so delicious. I am glad you tried it out, I need to too! the story goes I was 3 waiting in line at my first swin lesson and I was like the last in line to get my turn at puttering through the water. Well, I got tired of waiting (go figure) and I just jumped right in and started swimming myself- was never taught. I just did it. The instructor was amazed!
