E: Ellie Krieger’s Herb Roasted Chicken Breast

Thank you all for the sweet comments on my announcement post!! As I said, Josh and I could not be more thrilled! I will definitely keep you up to date on the pregnancy happenings (cravings included ;)).

How has your week been so far? Mine has been really nice. I did have to work on Monday, but it was an easy day. The day was made even better by the batch of Katie’s chocolate chip pumpkin squares I whipped up. Katie sent these to me as part of the December blogger baked goods exchange and I have been wanting to make another batch ever since. Delicious!

Monday night, I also made up a “fancier” dinner. I used Ellie Krieger’s herb roasted turkey breast recipe and applied it to two larger, bone-in chicken breasts. The outcome:

The chicken turned out great! I made Josh’s plate up with a baked potato and brussels:

While I put my chicken on top of a salad with an Arnold’s Thin on the side:

Anything exciting going on for you this week? We have dinner plans with friends on Friday night that I am looking forward to!!

Question: I think my heart rate monitor is giving out. I have a Polar F6 and LOVED it. I need something that works well both indoors and out. What are you using this day? Any thoughts??

You can rarely go wrong with an Ellie recipe! I have an F6 and still love it. It's pretty old, but it's never failed me!

My Polar gave out a few months ago too! It lasted about a year so I guess it's time was over.

Those bars look fantastic. I'm checking out the recipe now. ;)

Those pumpkin bars look great. I have a Polar (it's a higher end) and like it but it can go on the fritz sometimes. I guess that's how it can be with all gadgets though. If you already have the polar strap, maybe just go with another model?

my f6 bit the dust! i tried replacing the battery in the hrm but that didn't even work so i'm not sure whats wrong with it! i tried washing the chest strap but it consistantly says 0 and then will say my hr is like 210. i'm no i'm standing here doing nothing so i'm definitely not at 210. i just stopped using it haha it became too annoying and too much of a distraction but let me know if you figure yours out!

love your chicken salad beast :) i'm kiiind of in the random mood for chix now!

ellie has some awesome, fresh recipes!! i also LOVE chicken on the bone it makes such a different, the chicken just tastes more flavorful and moist (sorry I know people hate that word!) anyways, that dinner looks delicious!!!

I wonder how frank will take to the new little babe!!!! I am sure welcoming as ever :)

I have never tried any of Ellie Krieger's recipes....they always look so delicious, though!

I LOVE my F7. I think it's pretty similar to the F6, just the chest strap is different (or so I've heard?). I would highly recommend it!

i am guessing ellie doesn't put some butter under the skin...hehe...I do..I don't know how much fat and cals it makes...but OMG...the meat comes out so juicy and tasty...I just won't give up making chick and turkey breasts like this! haha

Glad to hear you are feeling well...with my first preg I craved all good for you stuff...veggies and such...and I got a kid that is super picky and hates veg...with the boys, I had serious big mac cravings...lol and they eat the more healthy than my daughter! haha

I've never tried Ellie Krieger's recipes but I keep seeing great recipes pop up. I'll have to try that one for Ari!

I don't wear my HRM too much anymore, but I'm interested to see what you get next!

"Fancier" dinners make weeknights feel a bit more special which is always nice! I like how you can use the same main component to create two totally different meals!

I use a BodyBugg so I don't know much about heart rate monitors but I'm OBSESSED with mine!

Are you eating meat again? I thought you were a pescatarian?

I'm going to try this! I've been wanting to make a roast chicken forever, but with just the two of us, it seems excessive. Besides, Ben only eats breast meat anyway.

I recently made Ellie Krieger's recipe for lighter sesame chicken. Fantastic! I thought it tasted like chinese takeout, only less salty. I made it with snap peas and next time I think I would add broccoli to make it a little bit heartier.

omg you are never going to believe this but i sold my polar f6 THIS MORNING on craigslist. I used it twice. Just wasnt my thing. Had i known you were in the market, i would have lyk about it.

are you eating meat again? i thought you were vegetarian, so maybe i just missed a post. anyways, i don't really care at all, but am just overly curious. i blame the journalism major in me. the chicken looks AWESOME, and i love ellie krieger!
