E: Applesauce Oatmeal Muffins

Thank you all for your sweet comments on my pregnancy update! You sure know how to make a lady feel good :). I will answer any questions I received in my next update on Sunday.  AND- Happy Birthday to my favorite fanatic!!

Josh’s Mom came into town for the first part of this week to look at a few additional houses. I wanted to make sure there was something delicious and easy to grab for breakfast, so I made this Quaker’s Oats applesauce oatmeal muffins recipe.

The only change I made was to use cinnamon applesauce vs.. plain.

These smelled INCREDIBLE while baking.

The topping adds a nice crunch and extra bit of sweetness to the muffins.

Just delicious! I have to travel for work a couple days this week. Definitely packing one of these babies in my carry on ;). Are you a muffin fan? Any favorite recipes to share?

Those muffins look awesome!! I am a huge fan of muffins. When I lived in Canada I was totally addicted to Tim Horton's chocolate chip muffins! Good thing I moved away from that temptation :).

I have made those before, too! They are delicious and very, very easy to make. I love that you'd pretty much have all of the ingredients at home, anyway!

I am a HUGE muffin person. My favorite is probably mini pumpkin muffins with butterscotch chips!!

I absolutely love muffins! I just made some last week. This recipe looks great with the applesauce and oats - I bet they are chewy yet soft :) Muffins make the best snacks!

oooh I just got Dorie Greenspan's baking book from the library and it has a ton of good muffin recipes. I plan to make some in the next few weeks esp because I have a brunch to bake for! :)

back in my dunkin donuts treats days i used to LIVE off of the coffee crumb cake muffins. seriously they're the most amazing thing in the entire world haha

i'd rather have cookies then muffins but i do love ultra warm muffins. i think my fav are cornbread muffins!

gahhh i hope you get home!! i've been seeing on the weather station that it's REALLY bad in DC!!

I've been on a muffin kick lately. It's my go to afternoon snack along with a piece of fruit.

I checked out the recipe and I like that it uses egg whites. I like to add a little protein in my bake goods.
