Pizza Rollups

FRIDAY!!!!! Anyone else excited :)? What do you have planned? Quick review of my Wednesday-Friday.

Wednesday: Body Pump in the morning, work, to the beach for an hour or so with Jenny (I have on a tube top bathing suit and I look a little nude haha):

For din din, fresh fruit (peaches, banana, apple (rome), pear):
Pizza roll-ups:

I used this 101 cookbooks dough (made with half whole wheat, half unbleached all purpose flour). Basic instructions: roll out dough (or spread with hands). Put down small layer of cheese, desired toppings, little more cheese, roll up. Place seam side down on cookie sheet covered with a thin layer of corn meal, brush with a little olive oil. Bake for 25 minutes at 425 degrees a la Giada. Josh and our friend Jeremy (who came over for din din) had cheese and pepperoni rolls. Jenny and I had cheese, squash and green bell peppers. Next time I will probably stuff them a little more full so they're oooozing like Giada's.


Thursday: Work, taught Body Step, sort of a lame salad for dinner (no picture), headed to Carvel for their non-fat ice cream with Jenny (so yummy).
Friday: Work, teach Body Attack, then ??? Josh and I haven't gotten to spend much time together lately because hes been SUPER busy with work, so we're hoping to do something special tonight.

The pizza roll-ups are such an adorable idea. I love the notion of dipping my pizza into the sauce. Kinda looks like sushi pizza!!

Wish I could just spend random days on the beach! Does the Lake Superior beach count? Haha it's kinda like an ocean! 8-) Those pizza rollups look quite yummy. I think I may have to pick up some Yves Pepperoni and make em!
