Baking it Up- Cookie Time!!

Hope your Monday went well! I can't believe the weekend is already over!! Why does it go by so fast??? My weekend went a little like this:

Saturday- Ran 2.5 miles, went to Charleston farmers market/lunch in Charleston, stuff around the house
Sunday- Ran 6 miles, did 1/2 hour of Body Attack, Beach, housework and LOTS of baking

I had a few care packages I wanted to send out this week and all of my recipients have similar needs- less white flour, less sugar! So I made the following and tried to adjust the recipes to meet these needs

Almost Vegan Pumpkin Oatmeal Chip Cookies (I used regular chocolate chips) based on this awesome recipe:

Phew! Tonight, I took body pump and then baked up some fish and served it with fresh green beans and strawberries! Yum! What did you have for din din?

Oh goodness, all of those creations look fantastic! Although I'm not surprised since everything you cook always looks fabulous!!

Love weekends spent baking. Your recipients are lucky. Haven't had dinner yet as I am still waiting to get off work!

Glad your farmers market is back! Sounds like you got really great stuff. Grassfed beef is awesome, you should try it.

Glad you had a nice weekend! I was finally able to run! Sat. and Sunday, it was gorgeous outside!! I love all of the treats you made!! How fun!

I've only been to Charleston once, and that was during the HOT summer. I'd love to visit again! I'm a complete nerd for historic areas!

Hehe, your almost vegan cookies remind me of some 99% vegan brownies I made last summer--I used a tablespoon of egg whites:)

I had scrambled tofu for dinner--YUM!

I bet your house smelled like a bakery - yum! Those recipes look awesome - I love anything and everything pumpkin, so I might have to try out the pumpkin oat cookies. I had potstickers that I've had in my freezer FOREVAH for din last night - so yummy!

Mm, I love pumpkin chip cookies! Haven't made them in a while, though! And your nutty stats and oat bran cookies look amazing, too. You always come up with the best baked creations!
