I served them on the cutest plate my friend Rachel got us:
Finished product (I later added some TJs refried black beans to go with these):
After step, I was back to my dilemma of not knowing what I wanted. In the end, I went with brinner, cheesy egg whites with hot sauce on a whole wheat tortilla served with cauliflower/broccoli and an apple:
I got a few questions about my exercise “convention” this weekend. Basically, when Les Mills (who creates the programs I teach- Body Step and Body Attack) puts out their quarterly new releases for each program, they hold a big exercise-a-thon, where the instructors can go and take the new classes for each program. My schedule for the day currently looks as follows:
6:15 AM-7:15 AM BODY PUMP 71 Master Class
9:10 AM - 10:10 AM BODYSTEP 77 Master Class
11:30 AM - 12:30 PM BODYVIVE 12 Master Class (not sure I’ll actually take this one)
12:35 PM - 1:35 PM BODYATTACK 66 Master Class
2:15 PM - 3:15 PM BODYFLOW 46 Master Class
4:00 PM - 5:00 PM BODYCOMBAT 41 Master Class
5:05 PM - 6:05 PM BODYJAM 50 Master Class (not sure I’ll actually take this one)
There will be some educational sessions thrown in there as well. It’s a LOT of fun to be in a room with a bundle of people who love exercise as much as you do. Its also pretty exhausting to workout all day! ;)
Side Note: Did you all see this article about Edward Norton joining an African tribe to run the New York City Marathon??

Pulled pork quesadillas sound delicious. What a great idea.
And I really loved the Ed Norton article too.
I'm so confused on the days too, haha :-D
SUCH a darling plate!!
Wow, that is one hell of a packed schedule - good luck!!
That is the cutest plate I've seen! What a sweet friend!
I hate not knowing what I want to eat because then I stand in the kitchen and either A. wait for something to magically pop out at me or B. nibble here and there until I finally just plate something. Love the brinner though - especially the hot sauce!!
Happy (early) Friday!!
Haha BRINNER!!! So glad you were inspired with a breakfast inspired dinner this evening. Just fantastic, ain't it! :)
Oh my, what an intense schedule. Sounds like you will be quite busy but it will all be worth it.
That sounds like fun with all htose questions. I always wondered how they did that in groups or individual lessons. Hope you have fun
such tasty quesadillas and what a darling plate!
ooooo love the schedule of classes! stay fueled!
didn't hear about that article, but will check it out now that you mentioned it!

And like Jenna!! I thought today was Friday too :(
But tomorrow is, so that makes it a-okay!
Good luck on the schedule, I know you can do it.
Have a great THURSDAY evening, and wonderful FRIDAY!
That is such a cute plate. I WISH it was Friday. Short weeks always seem to go by soooo slow!
Love the plate! Wow, that is a crazy day of exercise. Have fun. I am going to try Body Pump early in the morning. I am excited!
that's the cutest plate ever!!! Where did you get that? I want one for me and my hubby too! :)
those dillas look delish!!! not a fan of the pork product, but switch that right up and they would be amazing! :) your brinner looks amazing too!!!!
Hey hey girl! Once again, I've gots to make this pulled pork for my man - he would devour these quesadillas fo sure! The exercise-a-thon looks awesome (but tiring, agreed) - sounds like a great day of exercise to me!
At first I thought that was a pic of a pizza! I thought the corn and pork was an interesting topping combination (all it would need to be complete is some sliced bananas)! lol!!!
As a quesadilla, that sounds gooood!!
lovvvveee quesadillas. now i want one!
Love the plate - too cute!
Love quesadillas especially with pulled pork!
Oh my gosh! That is the cutest plate ever! I love thoughtful gifts like that.
You are going to be one tired gal this weekend - wahoo! It's so neat you are able to do that and enjoy it. Make sure you get lots of rest! (I know...I'm such a mom).
Cutest plate on the planet!
The plate made me smile!!! I've been having some weird I-don't-know-what-to-eat dilemmas too...weird!
Can't wait to hear how the convention goes! The agenda looks pretty jam-packed!!
Interesting article...I suppose if you're gonna go, go all out, right?
the days this week have been all over the place- so happy it's Friday!
What a great plate!!!!
Enjoy the exercise-a-thon!
HOdgepodge! I used that word in a sentence yesterday. hehehe.
It's amazing that the things you "throw together" look better than the meals I put effort into. Ugh.
Such a cute plate that means alot.....I love it!
I loove plates & have way too many--that one is super adorable though!
I hate when I don't know what I want for dinner..in that case I usually end up just having a clean out the fridge type spread ha ha.
I love that plate. Too cute!
So I went to Body Pump bright and early. I loved it!! I am really enjoying the Les Mills classes. You are lucky to be an instructor, so fun! Have a great weekend!
the quesadilla sounds great, and that day of workout sounds crazy! I do love Bodypump, though.
hodgepodge normally turns out to be some of the best treats...looks great!
My husband would LOVE those pulled pork quesadillas! Brinner is always a winner, haha yes I am corny.
I'm a big fan of the egg, cheese, hot sauce wrap combo. I have that a lot. A great "don't know what I want" meal. :)
Sounds like a fun class schedule. I keep thinking more and more about getting recertified and teaching again after we get settled in the US.
I love your grill by the way and an excited Frank could not be more adorable.
That plate is so cute!!
Quesadillas as well as eggs are both so perfect for when you need to use leftovers or just don't know what you want. You rocked both! I love having brinner. It's rare that I'm disappointed!
this makes me love ed norton even more!
yay for that weekend exercise sesh - that sounds like so much fun! enjoy and have a wonderful weekend!
I LOVEEE quesdillas! I had no idea they had refried black beans.
And this time, I would actually eat your dinner too. Except I'd add beans or bacon for a true breakfast taco!
I've been confused on the day of the week most of this week, lol. :-)
I see you went with Brinner :) Always a good choice!
Omg I love that place, so cute!
Loving the term "brinner"...
I cannot believe you are going to do all those classes in one day! I am so impressed by you!!!
cute plate! and the quesadillas look epic. that is quite the schedule, a lot to learn!
That looks like a fun and crazy day of working out! I think I would drop!
Those quesadillas look awesome!
I hate thinking it's Friday when it's not :)
