M: Skillet Balsamic Chicken Dinner and Some Reminders!

So glad the weekend is almost here! How has everyone’s week been? I have been SO busy trying to catch up from being out of town for the holiday.

Needless to say, I have sadly not had my meals planned out this week, which is very unlike me. It has always been easier for me to plan ahead. What can I say? I’m type A through and through!

So, with that said, I was having brunch with Miss Erica and was trying to figure out what dinner would be last night. Where do I turn when I’m having a I-have-no-idea-what-I’m-going-to-make moment? Aggie, of course! She always saves me when I need an idea for something super tasty =)

We all know I love my balsamic vinegar, especially the tomato and balsamic vinegar combo. When I found this recipe for Balsamic Chicken from Aggie’s Kitchen, I knew that was what the hubs and I were having for dinner! And, we have really been wanting healthier, lighter meals since we had all that heavy stuff last week.



Aggie served her chicken with wilted baby spinach and couscous. I definitely included the spinach, but since short grain brown rice is always on hand at my house, that was what we used instead of couscous.



This dinner was so easy and whipped up in a flash! I pounded my chicken breasts thin so it made them cook up even quicker. And it was so convenient because everything is cooked in one skillet! Except of course for the rice.

The combination of the Italian tomatoes and balsamic vinegar was of course perfection. After I made our plates and ate about half of my chicken, I spooned even more of the sauce on top of the chicken and the rice! It was SO good! The hubs proclaimed that this was one of his favorite meals I've made!



I’m always looking for new ways to make chicken. Chicken is sort of a staple here at the Mandi and Bryan household, so we get pretty used to the same ol’ stuff. This was a nice little change from the way we usually prepare our chicken. If you have any fantastic chicken recipes, send them my way! I can always use new ones!

And, last but certainly not least, if you are in the Charleston area this weekend or running around doing some Christmas shopping, the lab rescue I volunteer for, Daisy’s Place, is having an awesome event at the Sweet Olive in the Ion subdivision in Mt. Pleasant! It is this Saturday, Dec. 4th from 2:00 – 6:00.

The Sweet Olive is a super cute garden, home, and gift shop and they will have some great holiday gifts as well. Our founder, Melissa, will also be selling her beautiful jewelry with special discounted prices! There will be some delicious food compliments of the Square Onion and 10% of all purchases made at the Sweet Olive that day will go to Daisy’s Place Rescue and the Lowcountry Golden Retriever Rescue! So come on out and stop by!

In that spirit, Marley and Ziggy decided to make another appearance. I promise, they’re really not sleeping all the time, those are just the easiest times to snap some pics (if you're a dog owner you know exactly what I'm talking about, right?). Plus, they’re just so dang cute when they’re sleeping =)

Gosh, Aggie just ROCKS. I have like 10 of her recipes book marked. I totally want to go to that Daisy's place event- I've never been to sweet olive

Aww what a fun dinner! It's so nice when others cook for you!

My mom uses an Ellie Krieger recipe that is pretty similar to that one. It's a one dish meal that she loves!

YUMMM that looks so good I made a balsamic/caramalized onion chickendish a few months ago and the flavors of balsamic on the chicken were SO DELICIOUS! cant wait to try this one!

That sounds so good! It has taken me years to make it through a bottle of balsamic vinegar, so I need to have more recipes that use it in my back pocket.
