BBQ Leftover Bowls & Vegan or Not Bread (Updated)

Leftovers are great! Especially when you mix them up to create a new/different meal. I took the leftovers from our Father’s Day BBQ, added a few ingredients, and came up two great dinner bowls.

My bowl contained brown rice, fresh sliced tomatoes, summer squash (cooked up with some cumin & chili powder) and vegetarian baked beans:

Josh’s bowl contained brown rice and a stir fry of sorts. I mixed together cooked summer squash (seasoning described above), corn taken off the cob, a little tomato sauce (you could also use salsa), and a broken up burger. I later topped this with some chopped jalapeno:

And, on the side, we had cantaloupe:

I also had time to play around with my Vegan or Not Multigrain Bread recipe. I switched the portions of AP & Whole Wheat flour and really like how it adjusted the density and flavor of the bread.

How are your workouts coming this week? I am traveling from Thursday- Sunday this week (more to come on this!!), so mine are a little up in the air:

  • Monday: Ran to warm up, Taught Body Pump
  • Tuesday: Teach Body Attack
  • Wednesday: Run through new Body Attack
  • Thursday: Run outside?
  • Friday:  Off
  • Saturday: Run outside?
  • Sunday:  Off

the last time i travelled was italy and we walked EVERYWHERE. omg i must have burned like a billion calories everyday. we walked about 4-7 miles everyday, up and down hills, rocks, all sorts of crap. no wonder i ate like a monster and didnt' gain any weight!

The texture of that bread looks great!!
We're headed on vacation this Friday - actually down south! I hope to be able to keep up an exercise routine, but with the heat I'm not so sure......any tips?

I don't work out when I travel but it's because I'm walking everywhere, running up and down stairs at hotels/buildings, etc. That bread looks fabulous, as always :)

It's so hard to workout when traveling! but i always check out the gym and make sure there's someeee kind of fitness aparatus, it's just a shame they're usually from the 1950s haha

Hahaha! When I first looked at your bowl I thought I saw rice, beans, watermelon, and pineapple. I must be missing some fruit in my diet! I haven't traveled lately, but when I went to NYC I was a walkin fool! Fill me in on your Atlanta plans!

You are so creative to use your leftovers like that! I LOVE leftovers, but I need to try mixing them up a little bit more.

When I travel, I always try to walk and/or run outside, and then do active things if possible (kayak, swim, bike). And LOTS of walking!

Those bowls look really great! Even though I'm not a vegetarian, my favorite of the Bush's baked beans are the vegetarian. Love the flavor. Just had some with lunch, actually! ;)

I try to workout when i'm out of town by usually running or doing a travel strength workout with my exercise bands. You should check out my travel workout I posted last week for some ideas. Hope you have a great trip!

Last time I went to the Hilton Garden they actually had a "workout bag" you could get delivered to your room. It had a yoga mat, yoga brick, stretching bands and a little book on exercises you can do. It was perfect for me, because when I travel for work I want to do nothing after a long day than just stretch.

It's been so hard for me to find good workout places while abroad! Especially going to the gym and doing classes with an instructor motivating me to continue! I can't wait to get home and get back to my running routes and gym time! If you have any tips about working out while traveling, I would love to know!

i love making a mishmash bowl of leftovers. they never let me down! i try to exercise on vacation because i usually FEEL like it. if i don't feel like it, i won't work out, but more often than not i get anxious for a good workout session. that is why i try to go places that have nice gyms or at least a good running trail. i am loving cantaloupe right now!! yum!

I love to work out when I travel! Especially for vacation because I have plenty of time to do so. It's always fun to be in a new gym/running setting and to feel in-shape while enjoying some time off :).

I think I workout the best when I am traveling. I was away on a conference for a week and used the gym everyday, may be because I didn't have any distractions ;)

Mmmm, yay for customized bowls! I do this for Toly and I all the time. You know my whole bowl philosophy! :)

And once again, you amaze me with your bread skills. I need some lessons, the best I can do is Pillsbury! I know, I'm ashamed. :(

I love your dinner bowl! Makes me want to make one. I've got to make another loaf of that bread. I thought about adding some savoury goodies, but then I can't make French toast....unless I do a dinner one. Hmmm.....

I looove working out while traveling, actually! I try to run to explore the area, but usually end up doing different types of workouts, like swimming, hiking, snorkel, surfing, etc.

I like to get in exercise when I travel. If I'm doing a lot of walking and exploring I might skip the gym. But, if the trip involves a lot of eating, drinking, and lounging - I like to get in a good workout.

It depends on the vacation. If it's 2 days in the city, no way, unless the hotel has a pool, then I"ll swim. Most vacations I walk so much, that it feels like a workout anyway! If I'm on an extended vacation then I'll make a point of using the hotel gym.

I'm going to be out of town Thurs-Sun also. I usually workout an extra day before I leave to make up for being gone, and then I workout while on vacation if time permit's. But I don't commit myself to it or feel bad if I don't get a workout in. But I also LOVE working out on vacation.

yes! I always workout when i travel! i acutally love working out in new places esp when its nice out to go for a run in a foreign place! see my surroundings and get a great workout! I also now can bring my insanity dvds anywhere to do in the hotel rooms! I did that when Jason and I went ot bike week!

Your bowl looks delicious! I love throwing together good ingredients and making one great meal.

If I'm staying in a hotel, I try to hit up the gym a couple times or do some light yoga or ab moves. But if I don't get the chance, I try not to sweat it too much.

Yumm, I love leftovers, especially when they look like that!! I don't generally "work out" when I travel, but I tend to do TONS of walking and exploring. I'd rather not waste time in the fitness room :)

i work out a lot more when i travel...i walk about an hour at home every day but when i'm on the road i like to utilize the hotel gym or walk everywhere and explore!

YUM, love leftover bowls like that. I'm always happy to eat such a wide variety and try to use it in a new way. I love that you are always so caring and considerate about making Josh's meals too. Such a great person.

I do like to workout while I travel because I just feel like I have more energy overall!

Yum! Pineapple is awesome with spicy combos! I love one-bowl meals - so easy!

I love working out when I travel, but I usually cut back a tiny bit. Last summer, my cousin/BFF and I went to London and Paris. In London, Hyde Park was right across from our hotel so we ran 45 minutes/a day. In Paris, we ran up and down the hotel stairs for 30 minutes/a day and then did ab work. It was actually really fun!
