Strawberry Shortcake/Happy Easter

Hello and Happy Easter to all (who celebrate ;)). Did you have a good weekend? Mine has been very nice! Yesterday I taught Body Step, went food shopping, went to the beach, and then got my baking on! I made another loaf of whole wheat bread, made up some creamy scones for my Easter strawberry shortcake based on this recipe from Joy of Baking:
And made up some Suite Apple Pie Granola:

I also put my pork in the crock pot in preparation for making Aggie's pulled pork (which I also brought for Easter din din-sorry no pic!).
This morning, I got up and finished putting together the pulled pork and then Josh and I headed out the door to my Aunt's house for Easter dinner. I packed some of the food up in my Easter basket that one of my other Aunt's made me when I was little.



Dinner was great! The spread included ham, my pulled pork sammies, sweet potato casserole, scalloped potatoes, coleslaw, applesauce, and green beans. I tried to be as good as I could be! Dessert was my strawberry shortcake:

And a pudding/fruit/cake mixture my cousin's girlfriend made. I didn't eat a full dessert and instead just had a bite of Josh's (to make sure the shortcake turned out well ;))! I also had a few malted milk ball type Easter candies (YUM!)

Now I'm trying to relax and enjoy my day off from the gym, but am instead thinking about going for a run! Doesn't anyone else get super antsy on their days off from the gym/working out??

Happy Easter! Everything looks fantastic. Since I am away from my fam, I always celebrate Easter with my friends with a huge potluck with lots of wine and champagne. Today was no exception. Have a great Monday!

Strawberry shortcake is one of my top three favorite desserts, ESPECIALLY when it is made with homemade biscuits/scones. Erica, you've really done it this time! I mean, I always drool over your baked goods, but this seriously looks like heaven! I'm glad you snagged a bite ;o)

It sounds like you had an amazing weekend! I love your aunt's Easter basket that she made for you - my basket looks very similar with a white bunny! My favorite Easter tradition with my family would have to be the egg hunt, but sadly, I was not able to be home for the holiday this year!

Hmm I love many things about Easter, but one of my favorites is a family friend's annual gift of homemade chocolate eggs--I always steal all the coconut filled ones:)

The scones and granola look so good, and I love the fluffy purple bunny! Such fun!!

I hardly ever miss a scheduled workout, but I never made it to the gym yesterday. I did feel antsy and, I'll admit, guilty. I'm sure I will make up for it with some extra time spent in the gym this week. I definitely feel better (and sleep better) after I've worked out.

my favorite easter tradition is brunch at my nana's house and the kids egg hunt. we have a golden egg and if you find it, you get an enormous basket of goodies :D

I love the old basket.

My mom used to make these egg shaped baskets where she wrapped string around a baloon and then put some sort of hardening thing on the string and popped the baloon. Those were our baskets and it was such fun!

Mmmm- Shortcake makes me SO EXCITED for summer! And aren't malted milk balls the BEST?!! There is just something about easter candy - maybe the cute bunnies.

My favorite tradition (started by my g-ma) is that we have 3 or 4 jars filled with coins and some doller bills. Everyone guesses how much is in each jar and the closest winner gets to keep it! It may only be $10 or $11, but free money is free money. :-)

I get sooo antsy on my two "off" days a week. I typically end up going for a walk or doing 30 minutes of yoga stretching or something, because I can't just do nothing. It's hard to force myself to rest, but I know it's good to give my body a break. It just wish it didn't turn me into such a grouchy pants!

That strawberry shortcake! I just love that combo of shortcake and fresh strawberries.
Glad you had a good Easter. I was bad a bit, went off the clean eat, but back on track. All those pb easter eggs were just begging to be eaten!! LOL

We had pulled pork for Easter too! I have to admit pulled pork sammies with cole slaw and sweet potato fries is my favorite meal. I made it to BodyPump yesterday, it felt really good to go!

My favorite Easter "tradition" is enjoying Sweetarts Ducks, Chicks & Bunnies. I love how soft they are since they are so fresh!

Glad you had a nice Easter! The shortcake looks awesome! We went to the Deweys's (they are like our fam.) We had an egg hunt for the kids and enjoyed a tasty dinner! I am on a work trip all week. It will be a LONG week!

I love strawberry shortcake with the traditional scone-like biscuit instead of that spongy yellow cake in the supermarket. I like to add a little cinnamon to mine. These look great!

Fave Easter tradition has to be seeking out our hidden baskets with my brothers.

I love the basket! So cute!

I am carrying on the tradition of hiding easter baskets and plastic eggs filled with coins/candy.

My kids had so much fun trying to find stuff!

Aw, sounds like a nice day! My favorite Easter food is something I'll probably never make or eat again but my grandma would make something called Pizza Rustica...basically a pastry shell holding mozzerella, ricotta, pepperoni, sausage, proscuitto and maybe a few other insanely bad for you items :-) Heavenly though.

I go crazy when I don't work out. When I was a kid, my parents threw a Easter party for our friends and neighbors every year that had three level of egg hunts in three different yards. My mom makes this fabulous bunny cake every year and my dad would dress up as the Easter bunny--though we never knew it was him! I can't wait to do that for my kids.
