For din din tonight, I tried a slightly adjusted version of this Rachel Ray recipe. This is VERY delicious (although I think its a love it or hate it flavor)!! Unfortunately, there is a lot of sodium in this meal, so I recommend you use no salt added PB and low sodium soy sauce if possible. I also added extra veggies to my serving which thinned out the sauce a bit and helped out the nutritional stats. I added chicken to Josh's for extra protein and to help fill him up! Here is the recipe:
Rachel Ray's Hot and Cold Sesame Noodles (slightly adjusted)
1/2 lb spaghetti
1/4 cup soy sauce (low sodium)
1/4 cup creamy PB (no salt added)
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons hot sauce
1 tablespoon veggie oil
1 large package of fresh veggies (broccolini, broccoli, sugar snap peas...whatever you want!)
Cook pasta according to package directions, rinse under cold water. Meanwhile, in a large bowl, melt the PB in the microwave just slightly. Add in all other sauce ingredients (soy sauce, vinegar, hot sauce, veggie oil) and mix until well combined. Add spaghetti and veggies and stir until well coated. Top with sesame seeds. Serve!
Here is a pick of Josh's bowl:
I didn't get a pic of mine but just imagine thinner sauce and tons more veggies/less noodles ;)
Glad your class went well. Looks like a good dinner too! I went on a long run outside. It was HOT! I loved it though! I made roasted sweet potatoes and roasted asparagus for dinner. It was very tasty. I went to work at 5:30 today, I am beat. Time to relax and get to bed. I have my "procedure" on Friday. Any helpful tips? I am NOT excited. Have a good night friend!
That looks tasty!
Oh wow, super delicious! Great alterations!
Thats great that the launch of Body Attack went so well! It sounds like a fun class!
MMM, your dinner looks yummy! The bowl looks so pretty with the sesame seeds sprinkled on top!

Mmm, these noodles look delicious! I haven't had noodles in quite a while. I can't wait to try this recipe!
Sounds like you had a good day and for a Ray Ray recipe, the noodles sound pretty good, lol. My day was not so great. Hoping conditions improve tomorrow.
I've been reading adding PB into savory dishes.... and I was skeptical about it. But it seems to be a great addition, isn't it?! ;) Will be a must try!
is it totally surprising that, given my lack of cooking prowess, Ive subscribed to her magazine since the launch?
The pb in that sounds really good! I'm gonna have to try that sometime.
Hope your week is going well, Erica! : )
I am not a Rachel Ray fan, but she does have some good recipes. These noodles look tasty and easy.
Melty PB?! YUM! I'm adding this to my list of things to try. :-) Happy Humpday, girl!

a lot of people don't like Rachel Ray, which I don't really get. I love her bubbly personality, and her recipes are really practical and delicious. your dinner looks freaking awesome.
glad you had a good class!
I'm so glad the Body Attack launch went well!
That recipe sounds tasty - good call on the NSA peanut butter and low sodium soy sauce. It's crazy how quickly sodium adds up in a meal!
this is one of my favorite dishes because I get my pb and my spicy stuff in there. plus I love a good cold noodle salad. so many ways to make them. I'm so hungry now.
YUM! I love anything with sesame AND noodles!
Mm, looks so good. I love anything Seasame Noodles.
looks yummy. i think that you and josh and PB and I have similar tastes in food, because every single recipe you post here I have emailed PB to offer to make, and he always says YES PLEASE and then loves it.
very excited to continue making the recipes you post.
those noodles look delish! Thanks so much for sharing ;)
I haven't made her version yet, though I have made Tyler Florence's. Love sesame noodles!
mmm I love peanut noodles! One of my favorite dinners, but yes, definitely a kicker with all the sodium!
LOST TONIGHT!!! :)
So easy to make! And the best is that you can probably vary a few of the ingredients and make it your own!
I'm in awe of how you can eat so many veggies. I really need to, but they just taste so...
Unless there's ketchup. Or cheese. Which isn't healthy at all!
I was thinking about noodles today and now your picture is making want some even more.
This looks and sounds so lovely.
Oh, I've seen this recipe, but haven't had the chance to try it yet. My husband doesn't like Peanut sauces, but I love them. Glad to know it is good. It looks great!
this recipe looks amazing...thanks for sharing.
sigh. i love sesame noodles! this looks so good!
You have to tell me how you clean your whole house that fast. I hate cleaning!
Glad you had a good class, those noodles sound great!
Mmmm I LOVE peanut sauces!!! That sounds awesome! I am super jealous that you have Gina's macaroons in your possession!
that recipe looks great! some
of rachael's recipes are
challenging to make. they sometimes
included crazy ingredients.
(i used to have to write up her
recipes-and i'd be like-what the heck?)
you definitely did the recipe
justice! rachael would be proud.
Yummie, great to have this recipe since the Summer will be here soon.
That looks delicious. I love noodle dishes like this and I can taste the Asian flavors just looking at that picture!
This looks so yummy Erica! I just picked up some soba noodles and I have a ton of veggies from Costco so I'm going to make this for dinner tonight!! I was craving something like this but had no idea what to make!
darn, Josh is a lucky man. hahah i LOVe that you shared how you altered yours. I do the same too when i cook for my boyfriend. He loves his carbs and doesn't care so much for the veggies. :P
I wish you taught classes at my gym. I bet they'd be SUPER SUPER FUN judging by your lovely personality via your blog of course!!!
That dinner looks delicious!
Sometimes Rachel Ray gets it right!
I don't always love Rachael Ray's recipes but this one looks great! Cold noodles - perfect for summertime.
I have some soba noodles in the pantry, and I should definitely do this to them. YUM! Cold noodles are definitely something I love when the weather starts to warm up. Delish!
Glad the class went well!
