Healthy Spinach & Artichoke Dip (with white beans!!)

Its been a crazy week. One of those weeks that makes you want to spend an entire day in bed just relaxing & sleeping. Given that I have an (almost- whaaat) two year old and a slam packed weekend, an entire day in bed isn’t looking likely ;). BUT, I did take a little time off work this week to get my hair done:

Time in the kitchen always makes me happy too!! I re-made a recipe I made a longgg time ago, a healthier spinach and artichoke dip.  I am re-posting the recipe because it is that good! Note: this isn’t like the dip you get a restaurants (packed full of fat), so you must actually enjoy the taste of artichokes to like this ;)).

Ingredients:

  • Fresh spinach- bowl full (or desired quantity)
  • 2 15-ounce cans of artichoke hearts
  • 1 15-ounce can of white beans (whatever white beans you can get your hands on)
  • 3-4 tablespoons of olive oil
  • Juice from 1 lemon
  • chopped garlic (desired amount)
  • 1/4-1/2 teaspoon ground red pepper
  • 1/3 cup Parmesan cheese (+additional cheese to top dip)


Directions:
Preheat oven to 350


On the stove over medium/medium low heat, wilt spinach in a little bit of olive oil. In a food processor or blender, mix together wilted spinach, drained artichokes and white beans, olive oil, lemon juice, garlic, red pepper and parmesan cheese. You can either blend until smooth or leave some chunkier pieces (however you like it!).

Place mix into baking dish, top with additional cheese. Bake for 45 minutes. Enjoy with veggies, tortilla chips, or pita chips.

Josh enjoyed it (again) so much, he asked me to make a batch for his man day on Friday!

I can't believe that dip only has 1/3 cup parm in the whole recipe. Based on the color, it looks like it is full of cheese/cream. Must be creamy addition of the beans! I can't wait to make a batch myself. I bet it would be a great filler in a wrap.

You look super cute!! Love Kay and her strawberries, too. That dip looks amazing! Both my mom and I are huge fans of spinach and artichoke dip, so I'll have to send her this for sure. :) It has been a busy week but I'm looking forward to the long weekend!

Love this spinach dip idea with the white beans added, and gotta love when it even fools the man, great job girl! And I love that yellow dress, such a gorgeous color and looks awesome on you! Ohhhh this week - I can't even begin to think about how busy it has been. After getting home on a horridly delayed flight monday close to midnight to working 10 hour days after that to packing up yet again and leaving after work today for another trip - phew feel like it's just been nonstop! But can't complain, I kinda like it when it's crazy like that ;)

pretty lady and pretty hair...did you get highlights? or maybe that's natural highlights that frames your face :)

I have 2 tubs of artichoke hearts that I purchased at Costco hoping I could find more recipes to use it in besides putting it in my salad, this recipe sounds good with some thin pretzel chips. Thanks for sharing

Loving your hair!! I am slightly jealous that you look that fantastic in yellow--I look terrible in that color!

I can imagine that Kay is a little ray of sunshine based on the fact that she is always smiling in the pics you post :)
