E: BBQ Chicken & Jenna’s Beans

Thank you all for your well wishes for Josh & Frank. Josh is feeling much better and Frank has the puppy version of pink eye (which is not contagious to humans- thank goodness). He is on meds now and is doing much better!

Tuesday night, I was in the mood for barbeque. I decided to whip up Jenna’s sweet and spicy barbeque beans (along with barbeque chicken for Josh).  I hadn’t ever cooked or eaten kale before and I was very excited to try it.

I made a half batch of beans and they were DELICIOUS!

We also had fresh fruit. Josh’s version:

Yum, yum! Loving grapefruit right now. I also used some tortilla chips as dippers.

So we’re halfway through the work/school week. Weekend plans yet?

I've been thinking about getting some grapefruits. They're pretty right now and would be good in so many recipes.

I'm obsessed with grapefruit. I think I eat one almost every single day. I hear the health benefits of this fruit are so top notch.

Dinner looks fantastic. I never bought collard greens. Definitely a southern thing but I think I would like them, considering my love for Kale and pretty much anything green.

I've never tried kale either!

And I'm glad the boys are doing better. I don't have any plans for the weekend yet - we might go see Black Swan, though, I've been dying to see it!

Poor Frank! I know how much pink eye sucks, so I feel bad for him :(

The kale looks awesome! And I'm obsessed with grapefruit too... It's even better when someone cuts it for me :)

Before I left Michigan my mum gave me a bunch of grapefruits. I don`t have a grapefruit knife so they have been such a pain to eat. However they are delish. Is it hard living with a meat eater and being a vegetarian. I am slowly working toward becoming vegetarian and my husband is a crazy meat eater/hunter so it gets rough around here

I had a bad experience with canned kale, but you've inspired me to try the fresh variety!

greens is one of those foods I have never tried...your version looks really good. I made Mandy's crockpot bbq chicken a few weeks ago, and the family LOVED it...I just picked up more chicken to make it again...and its soooo easy! glad all are on the mend!

I really need to get the grocery store... we were down to boxed mac n' cheese last night! Fresh citrus would rock right now. :-)

Agreed, you gotta try kale chips, just google them and you'll find the recipe.

glad to hear the boys are on the mend!

Mmmm love bbq chicken, definitely one of my favorites. Also really like kale - I wish I could get The Man to eat it too. I like to cook mine with apples & onions w/ a splash of balsamic at the end! I really like this kale & beans idea though too, looks great :)

I really like the combo of beans and greens! I usually eat beans on my salad but not cooked in. +the vitamin C makes you absorb iron really well (I'm thinking of just completely copying your meal here!)
