E: Back to Baking (Pancakes, Muffins & Cookies)

As always, HAPPY FRIDAY! This is going to be an especially exciting & busy weekend for us, as Josh’s parents, sister & her boyfriend are visiting!!  I’m not sure about you guys, but ever since the holiday rush….I have not felt like making anything sweet. This week I finally got over that hump and got back into baking.

Wednesday night was a busy one in our house, so breakfast for dinner seemed perfect. I made up a batch of these oatmeal pancakes and topped them with berries.

Thursday afternoon, I baked in preparation for the arrival of our guests. I tried a new banana chocolate chip muffin recipe. The only change I made was to make the muffins mini! Instead of baking them for 30 minutes, I baked the minis for 15. They turned out fabulous:

I also made a batch of my big oatmeal chocolate chip cookies.

I haven't baked since Christmas eve! We still have way too many sweets in our house.
But C's birthday is next week so I'll be right back into it soon enough! :)

I haven't really baked in a long time. I used to bake banana bread and things like that often. But I don't really eat that sort of thing (well, I want to if I make it of course) so I just don't make it unless I'm taking it to work. Those muffins look great.

I have been trying to avoid baking since I still have a ton of sweets in the house. Definitely need to make some friends with people so I don't have so many goodies laying around. Or just figure out some self control/super healthy recipes.

I could never get sick of baking; it's my favorite activity! And you can eat more because it takes energy doing the dishes, or that's what I like to think.

Oh yeah, since xmas I have not wanted to bake at all - I have felt so full of sweets! That hasn't exactly stopped me from still eating the leftovers, though... :) Of course just as all the leftovers are coming to the end I get talked into baking for my coworker's birthday today. I modified Martha's recipe for brownie cupcakes (to make them gluten free and mocha flavored) and they turned out awesome! Will post the recipe soon. Happy weekend!

Your pancake recipe looks awesome - I bet whole wheat pastry flour would go great in those.

girl you are READY for guests! i haven't had even a single little urge to bake since the holidays haha but i'm having a post-holiday party tomorrow night where everyone has to bring their favorite dessert so i better decide on a few things to bake up pronto!

I actually baked some peanut butter dough ball cookies last night. They turned out okay. I think I'm going to make some cinnamon chip cookies this weekend for my husband!

I have a bunch of ripe bananas in my freezer--this post reminded me. Looks like I need to do some baking this weekend :) I'm also planning to try homemade marshmallows!

I am ALWAYS ready to bake....now I just need someone to bake for! :-) I think I might try out some (wheat free) Nutella cookies, for my nephew with food allergies. Your pancakes look perfect....I always have trouble with mine. :-(

I prefer making banana muffins over banana bread. The muffins cook better and are a nice little treat.
