Strawberry Rhubarb Crisp

Wonderful Saturday :)!! How was yours?

I started my day teaching my usual Saturday morning Body Step class, which was a total scorcher (if I do say so myself). After breakfast and a shower, Josh and I headed out to Isle of Palms to try and locate the Spoleto sand sculpting competition. Unfortunately, we couldn’t find it!! But we did enjoy a nice walk on the beach.

After watching some Glee, Josh and I headed to my parents for a bbq. My addition? A rhubarb strawberry crisp from Emeril’s new cookbook, Farm to Fork

I had never tried rhubarb before and was super excited to give it a go. I made a half batch of the crisp and it turned out great! The rhubarb adds a fun, slightly sour flavor to the crisp. Very yum!

My parents made steak (unpictured), corn on the cob, an amazing tomato and cucumber salad (with feta) that I some how didn’t get a picture of. For myself, I heated up a sweet potato with vegetarian baked beans and had some corn and a bundle of tomato/cucumber salad, and crisp (obviously) mmm:

It is always so much fun to hang out with my parents!!

On tap for tomorrow? Nothing! Maybe some pool or beach time (if the weather is nice). What are you doing?

Rhubarb is AWESOME! Glad to hear you liked it! Yummy eats at your parents place. I have a craving for corn on the cob now. LOL! Have a great Sunday!

Tomorrow I plan on relaxing with my hubby in the morning (pancakes, perhaps?) and then going to my friend's son's baptism party. Should be a good day!

great summer eats and the rhubarb crisp looks amazing! I remember when I lived back home, my mom would pick fresh rhubarb from the front yard and make the best strawberry-rhubarb jam- yum!

Gaaaaaah I've wanted to try rhubarbs forev! Where in the world did you find it!?? Am I gonna have to come all the way to SC just to get a batch?

I've got spin and schoolwork on the sched tomorrow with a side of "i have no idea what i'm saying for my maid of honor toast that i have to give in 5 days"

Strawberry rhubarb is one of my favorites! I seem to remember trying rhubarb by itself and being surprised when it wasn't sweet- easy to forget it's a vegetable!

I absoulutely love rhubarb! My parents grow a bunch at home, so they are always bringing it to me when they visit--they just had a rhubarb fest in town yesterday, but unfortunately I had too many grad parties to go to, so I couldn't make it!! I want to try to make rhubarb ice cream :-)

thats so crazy i can actually TASTE THAT CRUMBLE! it looks exactly like the one my mom makes! omg and vanilla ice cream on the side.. seriously craving this! ... hmm its 8:30 am tho.. maybe i should re-view this in the evening lol

actually breakfast crumble isnt a bad idea....

What a great BBQ! I love hanging out with my family on weekends too- nothing beats family outdoor meals. LOVE rhubarb! It's served a lot here in the UK... I think I ate more rhubarb desserts when growing up than any other kind.

that rhubarb dessert looks amazing! I tried rhubarb for the first time last year...will have to try again with that recipe. all of your eats look and sound so delicious and fresh. I just sent your blog to a friend of mine who is trying to "get back on track"... I told her you always inspire me to eat well!! You're the best Erica!

I've actually never used rhubarb either, simply because you have to use so much sugar to balance out the tartness.

I was always freaked out by rhubarb when I was younger...dont know why. Now I LOVE it!! I love tart things so its perfect :) That crisp looks DELICIOUS! Such a great flavor combo

goodness, tedy is adorable!! that crumble looks so good. i have never baked with rhubarb but i have seen it all over lately, i should give it a whirl. i am with heatha, your eyes are just incredible!
