Vegan French Toast

Already through Wednesday!! You have to love a short week. How have you been? Hope everything is going well. How are your workouts? I suppose I should call my Wednesday posts “Workout Wednesdays”, as I always seem to talk about my weekly plan on Wednesdays. My workout plan has been/is as follows:

  • Monday: Taught Body Step
  • Tuesday: Taught Body Attack
  • Wednesday: Ran 6 miles in the SC heat (I think this means I’m a real southerner now, right Kath? ;)- btw Happy Anniversary to Kath & Matt)

  • Thursday:  Teach 45 minute Step, 45 minute Pump
  • Friday: Off
  • Saturday: Teach Body Step
  • Sunday: Off

What do you all do in terms of off days? Do you plan? Do you listen to your body? How many/week? I plan around my teaching schedule but aim for two days off a week (since my schedule is pretty heavy otherwise).

Tonight, I attempted to makeup a Vegan French Toast recipe. Note: the actual French toast mixture is vegan, the Great Harvest Bread (one of the breads I used), is not vegan.

Ingredients:

3/4 cup Almond Milk (I used sweetened original)

1 tablespoon whole wheat flour

1 tablespoon ground flax seed

1 teaspoon vanilla

Desired amount cinnamon

6 slices of bread (I used 2 slices of Great Harvest Dakota Bread, 2 bagel thins)

Directions:

Wisk together first five ingredients. Dip bread (both sides) in mixture (make sure it really soaks it up). Spray a pan with non stick spray (or alternatively add oil). Place pan over medium high heat. Cook toast up, flipping until toast has reached desired crispiness.

I served Josh’s with some eggs, spinach & cheese (obviously not vegan).  I topped both of our plates of French toast with strawberries (which I cut up, sprinkled with stevia, and let sit to get extra juicy).

I topped mine with some yogurt (and ate the rest of the yogurt on the side ;)). You can use soy yogurt to keep this vegan:

There's a recipe for vegan french toast in ED&BV using chickpea flour that's really good too!

BINNERRRRRRRRRRRRRRRRRR!!!!!!!!!! hahah i just had eggs for binner! and of course a ridiculously large bowl of veggies. yum.

i haven't had f toast in forever!

i'm usually a planner when it comes to workouts ahead of time and always give myself a day off which is usually the weekend. i find that if i take off a day during the week i'm usually sluggish that day which i hateee!

This post came at the perfect time because I have seriously been craving some french toast! I almost picked up the frozen kind from Trader Joe's and then figured I should just make it myself. This recipe looks delish!

Mmmm we did breakfast for dinner last night too, so good! I usually aim to workout 3-4 days per week, any more is just too much to juggle with working 45-50 hours per week at the job too -- but you make it look effortless! :)

Good for you for getting a workout in outside, I hate working out in this dreadful humidity.

And that french toast? YUM! I havent had french toast in awhile and think that needs to change soon. Two more days---yay!!!

I listen to my body. On days when I'm just not feeling it, I do a walk or an easier combo type workout.

girl when we lived in myrtle bch and also in wilm, NC we used to run, avidly. and we trained for some half's and marathons in july, like heat indexing at 105+. so disgusting. props to you!

Love your workout plans! I try to plan workouts and rest days but TRY to be flexible...sometimes I'm just not feeling the planned workout and need to listen to my body :)

What a great run!!! I'd say let's run together soon, but there is no way I could ever keep-up. The french toast looks delicious. I tried being a vegan last year and I wish I had more recipes like this one. Can't wait to see you soon sweetie!! I have been planning my workout schedule around teaching, too! Luckily, my teaching schedule is not so intense for the summer so now I can actually plan some workouts for myself! :)
Great job on your run - that heat looks brutal......!

I love breakfast foods for dinner. So easy! I haven't had french toast in years which is silly because I eat GF bread all the time...

I plan my workouts loosely - 2 swims, 2 rides, 2 runs - and adjust as needed to make sure I get it all in. I plan 2 rest days and sometimes I take more, sometimes I take less. I'm so rigid with the rest of my life that workouts seem more enjoyable when they're moveable on a whim. I imagine that would be hard to do for you, though, since you teach classes.

I love how you and Josh usually have the same things, but you just switch it up a bit so it can suite both of you--looks delish! Breakfast foods are by far my favorite.

My off days are usually days that exercise isn't convenient. Like Sundays are usually busy doing stuff with family or around the house, so that naturally becomes a rest day for me.

Brinner is my favorite meal! I usually go for pancakes or eggs, but french toast totally needs to make a brinner appearance.

I usually have 1 rest day each week. Most of the time it's on Saturday just because I'll be busy on that day, but sometimes I'll take an extra during the week if my body needs it.

My gym time is back on track! YAY! I usually take the weekends "off" from working out because we're pretty busy around the house (and kids) anyways.

This is the second French toast post I've seen this morning and now I really, really want some!

Every week I loosely plan my off days based on what else is going on. But I try to listen to my body and be flexible if something comes up or I'm just not feeling great on a certain day.

And breakfast for dinner (or I guess Brinner...haha love it) is my favorite meal! That french toast looks awesome!

The french toast looks DELICIOUS! Brinner is one of my favorite things in the world. I LOVE savory oats and they are so great in a (time) pinch!

BFD rules my life. it's the best - in fact, i have had a veggie egg scramble for dinner the past two nights :)

i try and plan my workouts every week, but things come up so i usually just go with the flow. however, i usually end up with anywhere between 1-3 days off per week. happy thursday!!!!

Wow you really are on a vegan kick! The french toast looks yuumy, really you just use almond milk and subtract the eggs- does the whole wheat flour provide the missing body from them?

My off days are determined by how beat up I feel :P and on the rare occasion we have to be somewhere super early (I'm a morning exerciser, can't seem to do it later in the day)

Delicious recipe! I love the strawberry additions.
In the winter I do a lot more planning. IN the summer, I never really know how my evenings will go, so dinner has just been thrown together lately.

Mmmm vegan french toast! That looks really good.
If I'm training for a race, I tend to work out about 5 times a week - 3 runs and a couple yoga classes but when I'm not, it's a bit more relaxed and depends how I feel. At least 3 times a week to keep me from feeling gross though!
