After a full day of work, I went out to run some errands and then picked up a misto at Starbucks. I sat out in our backyard with my misto in my make shift lounger with the third Twilight book...
It felt so wonderful to read for a couple hours :). Dinner tonight was extra yummy (to borrow a word from Polly ;)). I picked up a papaya from Publix (they're on sale this week!!) and enjoyed half of it with dinner....
I also took some inspiration from Sandra Lee (even though shes not exactly my favorite Food Network host) to make the following Mexican Shrimp Bowl (makes 1 serving):
Ingredients-
~ 9 medium shrimp
1/2 avocado
1 pepper (I used 1/2 a red and 1/2 a green bell pepper)
1/2 tomato
1 tablespoon salsa
1-2 teaspoons lime juice
(feel free to play around with the ingredients, use whatever veggies you have on hand)
Directions-
Boil up shrimp for ~3-4 minutes until cooked through. Place veggies on grill or under broiler until cooked to desired tenderness.
In a bowl, mix up salsa and lime juice (feel free to add some fresh cilantro as well). Add avocado, cooked shrimp and veggies and mix well. Enjoy!
Josh is on work travel again, so I plan to spend the night with my boyfriend (Frank ;)), do some more reading, and watch SYTYCD! What are you up to?

I am totally playing with my cats tonight. Your dinner looks soooo yummy!
I need to get some papaya! Publix has mangoes on sale too :)
Enjoy reading more Twilight!! I'll be watching "Top Chef Masters."
You have such a pretty yard! I love lounging and reading--I get so into books that time just flies.(as in 3 hours goes by)haha. But I have to enjoy leisure reading in the summer, because once college starts up again, it's all textbooks--blah!
I've been looking through my wedding album that I just picked up from the photographer!!
I'm not a Sandra Lee fan but she just kills me with her, "It's cocktail time" and table scapes. She makes me laugh :)
What a beautiful backyard! That sounds so relaxing!
I am going to watch SYTYCD too! Good luck with the desserts, whatever you make will be fabulous! Have a good night with Frank!
ooh, i hate sandra lee (i know strong words but i can't stand to watch any of her!), but that recipe looks great :)
i missed the earlier post but i was going to suggest avocado pie (there's a link on my site, but it's a recipe from pinch my salt). very easy with a premade crust and unique :)
Sounds like such a lovely relaxing afternoon.
Sandra Lee is probably my least favorite chef on Foodnetwork too. She is so cheesy and her dishes usually don't look all that great. But every now and then, she does make up some pretty tasty and easy things (like her cherry cheesecake muffins! Awesome) Oh, and homegirl does know how to make a good cocktail. ;)
Glad to hear you had a wonderful day sweetheart!
Mexican shrimp bowl! Looks great and fresh!
I'll be catching up on some blog reads tonight!
Watching SYTYCD right now!! LOVE that show :) That shrimp dish looks awesome...LOVE shrimp and avocados. So jealous of your reading time! I am desperately trying to finish Harry Potter before I see the movie!
I really like your backyard it looks so serene!
The shrimp bowl= yum!
Twilight is so freakin' addicting! I love mangos frozen, but not fresh for some odd reason.
I still haven't read anything past New Moon... need to get them from the library.
Mmm, shrimp and avocado is one of my favorite combos!
"Fight Club" is on TV and I'm on my own tonight, so I'm curled up in bed watching!
Haha, I bet you're thankful to have your boyfriend around when Josh is gone ... I know I'm thankful for my two girlfriends to keep me company! lol.
I love your back yard! How relaxing! :)
And love the shrimp bowl! I think I'm going to get some tomorrow... it's been too long since I've had shrimp!
I LOVE SYTYCD! :D Also love papaya...mmmm...
