Today was busy, busy trying to get things settled before leaving for the weekend. I went food shopping for the week, cleaned the apartment, laundry/ironing, packing, cooking! For din din tonight, I cooked up some scallops and broccoli for Josh. I mixed up some spices and flour and coated the scallops and cooked them up in a frying pan.
I am not much of a scallop fan so I made myself some more green ;). Romaine, craisins, broccoli slaw, broccoli, chickpeas, feta, olive oil, balsamic vinegar:
I packed up the foods I'm bringing with me this weekend. The hotel I'm staying in has a fridge and micro, so I'm going to try to eat a lot in the hotel (since I'm going to be pooped). To start: soups and a sweet potato:

mac and cheeese is my fav too!!
I think that is a great haul to bring with you!!!
And oh yummy eats!!!
Good ideas to bring hotel-ready food!! Maybe u can pick up bananas/fruit at 7-11 or something?? Have a great trip :D
Sounds good to me! You're such a sweetie pie to stock up the refrigerator for hubby while you're away.
Looks like you're well prepared! I'm so glad it's Friday. When I can't face cooking but want to whip out something decently healthy, i can usually microwave some frozen veggies with some cooked brown rice and scramble in an egg. As for flavor, well that just depends what's in the fridge!
That's great you will be able to bring food with you instead of trying to find things to eat out. My go to is this soba with fried egg I fond a while ago. Now, I always keep soba on hand!
That's great their is a fridge!
Looks like you've packed a pretty good stash. I always bring little baggies of cereal or trail mix, maybe some fruit, and ALWAYS a jar of nut butter.
Can't wait to hear about Body Attack training.
My favorite go-to meal - probably lasagna as it freezes well, you can add tons of veggies, and I love the leftovers!
Have a good weekend Erica, and thanks for all of your sweet comments on my blog. Very encouraging!
i love pan seared scallops! with a sprinkling of kosher salt, it's absolutely simply perfect!
you bring sweet potatoes into the hotel? how are you going to cook it?
suggestions? fruits, trail mix, instant noodles :D
Have a great trip! Can't wait to hear about the training!
Your salad looks amazing!!
:)
If by GO TO you mean it's always in the house for me to make :) then OATMEAL (sad, I know) but if by GO TO you mean the store? Im going with grilled salmon.
I hungry now.
You are so organized! I hope your training goes well. I love craisins on my salad. I rarely have one without them. :)
I think you already got my go to meal. I like a good pasta bake for something quick, easy and comforting. I usually use a bit of chicken and throw in some extra veggies. And cheese, lots of cheese. :)
hope you have a great weekend, erica!!
looks like you're bringing some good eats with you : )
and, yes i'm VERY excited for friday;)
mmm, that looks so good!
Good for you for taking your food along with you while you travel, that really is the best way to stay on track!
Have a great weekend!!

Favorite meal = my B-S-Cubed dish (black beans, sweet potato, spinach, salsa).
TGIF, ERICA!!!
yum!! have a great weekend, looks like you're well-prepared :)
Josh is so lucky to have a little cook like you make sure he always has good food!!
I love when I can eat my own food in hotels...saves so much $$!
Mmmmm scallops, I would of been all over those!
I'm so impressed by how organized you are! Have a great time at your training!
You are going to have so much fun this weekend! And you are so organized....I am impressed. I would be packing my stuff literally 10 minutes before leaving hahaha.
Hmmm...my favorite go to meal is probably chicken because you can jazz it up however you want. And Morningstar burgers! YUM.
Have a great weekend! :-)
In response to your first question: HECK YES im excited that it is friday!!
The food looks great girlie, as usual you are a master of the kitchen! haha
Have a great weekend love <3
scallops are my all-time fav...and yours look great.
I was going to say you could bring fruit like bananas, clementines, and apples.
so nice of you to make a pasta bake for your man. have the best weekend!
Your eats for the weekend look great! Good luck and have fun at your training.
My go-to meal is taco salad.
Don't forget the nuts! I hate not having access to my peanuts, almonds and walnuts. And some bananas! Oh and oatmeal. I would be soooo lost without my instant oatmeal. LOL I know, I got carried away here.
That pasta dish looks SO GOOD! Anything with carbs, meet, and cheese is good in my book!
Like Dawn suggested, I'd bring some nuts too...I always have pre-measured ziploc bags of almonds on hand. Do you like dried fruit? I recently discovered dried peaches and they're almost too addictive...gotta be careful with that extra sugar too.
i'm not much of a scallop person, either. i'll have them every now and then, but nick really likes them. your salad looks yummy :)
You are such a sweet wife!! Josh is very lucky!
Don't forget your can opener for the soups!!
Have a BLAST, girl!
Everything looks great, especially that salad!
That salad looks divine! The chocolate coconut think bar is SO GOOD!!
My go to: pita sandwich with hummus ;)
Happy Friday girlie!
You have to tell me how that new Luna Bar flavor is (the white macadamia). I saw it in Whole Foods the other day and was all sorts of curious, but too lazy to run over and grab one!
yes, happy friday!
one thing i didn't mention on my blog post about travel food was breakfast. i like to take individual tupperwares with Ezekial cereal and individual soymilk sippy packages. Those don't need to be refrigerated, so even if i don't have a fridge I just open a soymilk, pour into the tupperware and have a decent breakfast!
I think having a fridge at a hotel should be a requirement!
I don't eat scallops, but the greens look good. :-)
I love scallops and that looks like a great salad.
I'd bring some fruit...apples travel well.
Oh and have a great time!
Cassoroles do it all. I bring ground flax seed and put it on EVERYTHING when I am away from home. Rottisorie chicken make nice meals and leftovers for sandwiches too.
