Black Bean Soup & Baking

Hi guys!!! Sorry to be MIA for a day but I needed time to catch up on all of your wonderful blogs! First things first, I have a few people I'd like to give a shout out to! First off- Hi to all new readers out there! Second- I want to say congrats and hello to Kim who also just finished her BodyAttack training! Third- Hello to Michelle! Check out her awesome blog Lucky Taste Buds. Fourth- if you haven't done so yet, check out Meghann's fund raiser

Yesterday was a CRAZY day! We got some awesome workouts in at training and I really challenged my body (I have never done that many push ups ever!). Great news- I passed the training!! I was super excited! After training, I drove the four and a half hours back to Charleston, ate, and passed out!

Today was a catch up day! Work was busy and then the remainder of the afternoon was spent doing laundry and running errands! I also fit in a Body Pump class. Tonight, I made some din din and packed (I have to travel for work tomorrow). What kept me going? A skim pumpkin spice misto:

For dinner I made Josh two quesadillas:

And we both had my black bean soup (I could eat this every single night!!):
Randomness: My publix finally started carrying CHOBANI!!!!!! I bought a bundle of small ones and one giant vanilla. I won't have to run to WF's every week now!

I also did some baking tonight. I made Tina's bars (which you can see behind the Chobani to the right). I also made Sarah's Granola (a staple in our house).

Ya'll have a good Monday?? Hows the week looking?

Congrats on passing training!!

And woo hoo for Chobani appearing at Publix, now if only Kroger could jump on the bandwagon, I'd be set!

Have a great night!

Congrats on passing training!

I wish I could find the giant size Chobani. I hate all the trash I generate by eating the individual size.

Yummy bars! I made some once and they turned to mush... I will try again.

Congrats on passing the training and glad to have you back!

Your black bean soup looks so yum.

Thanks for noticing the changes in the pics on my blog. Its the same camera but I've been taking pics more like I used to take for photo class in high school. I like it more this way!

Exciting news that you passed BodyAttack training! I seriously don't know if I could have done it as my arm strength is pretty lame...I'm working on it though. All those Chaturangas are helping, but I still can't do a chin-up without the assisted machine.

Two quesadillas? Boys and their appetites...so not fair!

Hooray for Publix. We had one open up down the street from us a couple of weeks ago. They have a great yogurt collection, and I totally understand your excitement!

Monday was okay, nothing too exciting. Have a good week Erica!

Homemade granola - yum!

Congrats on passing the training. I maxed out on push ups 4 days ago and I'm still a little tight.

I love that Granola recipe. My mom always made one growing up, only hers had Karo syrup in it...This is pretty close and healthy, and it has coconut in it which is one of my favorite ingredients.

Congratulations on passing the training! Push ups are the one thing that I still can't do well. No matter how strong I get, I can only do a couple from my feet before falling to my knees in exhaustion.

Anyway, awesome job!!! And that soup looks fab!
