Scallops ...and More Green ;)

Hey guys! I know I ask this every week but...Are you excited for Friday? I am! I can't wait for Body Attack training!

Today was busy, busy trying to get things settled before leaving for the weekend. I went food shopping for the week, cleaned the apartment, laundry/ironing, packing, cooking! For din din tonight, I cooked up some scallops and broccoli for Josh. I mixed up some spices and flour and coated the scallops and cooked them up in a frying pan.

I am not much of a scallop fan so I made myself some more green ;). Romaine, craisins, broccoli slaw, broccoli, chickpeas, feta, olive oil, balsamic vinegar:
I packed up the foods I'm bringing with me this weekend. The hotel I'm staying in has a fridge and micro, so I'm going to try to eat a lot in the hotel (since I'm going to be pooped). To start: soups and a sweet potato:

Rice cakes and applesauce:

Bars!

I will also be bringing peanut butter, veggies, hummus, chickpeas, maybe oatmeal! Any other suggestions??
To keep the Joshers filled while I'm gone, I made him a big ole pasta bake tonight. Simple and easy. Browned up meat and garlic, add sauce. Cook pasta. Mix top with cheese, bake at 350 for 20 minutes!!

Good ideas to bring hotel-ready food!! Maybe u can pick up bananas/fruit at 7-11 or something?? Have a great trip :D

Looks like you're well prepared! I'm so glad it's Friday. When I can't face cooking but want to whip out something decently healthy, i can usually microwave some frozen veggies with some cooked brown rice and scramble in an egg. As for flavor, well that just depends what's in the fridge!

That's great you will be able to bring food with you instead of trying to find things to eat out. My go to is this soba with fried egg I fond a while ago. Now, I always keep soba on hand!

Looks like you've packed a pretty good stash. I always bring little baggies of cereal or trail mix, maybe some fruit, and ALWAYS a jar of nut butter.

Can't wait to hear about Body Attack training.

My favorite go-to meal - probably lasagna as it freezes well, you can add tons of veggies, and I love the leftovers!

If by GO TO you mean it's always in the house for me to make :) then OATMEAL (sad, I know) but if by GO TO you mean the store? Im going with grilled salmon.

You are so organized! I hope your training goes well. I love craisins on my salad. I rarely have one without them. :)

I think you already got my go to meal. I like a good pasta bake for something quick, easy and comforting. I usually use a bit of chicken and throw in some extra veggies. And cheese, lots of cheese. :)

You are going to have so much fun this weekend! And you are so organized....I am impressed. I would be packing my stuff literally 10 minutes before leaving hahaha.

Hmmm...my favorite go to meal is probably chicken because you can jazz it up however you want. And Morningstar burgers! YUM.

I was going to say you could bring fruit like bananas, clementines, and apples.

Don't forget the nuts! I hate not having access to my peanuts, almonds and walnuts. And some bananas! Oh and oatmeal. I would be soooo lost without my instant oatmeal. LOL I know, I got carried away here.

That pasta dish looks SO GOOD! Anything with carbs, meet, and cheese is good in my book!

Like Dawn suggested, I'd bring some nuts too...I always have pre-measured ziploc bags of almonds on hand. Do you like dried fruit? I recently discovered dried peaches and they're almost too addictive...gotta be careful with that extra sugar too.

You have to tell me how that new Luna Bar flavor is (the white macadamia). I saw it in Whole Foods the other day and was all sorts of curious, but too lazy to run over and grab one!

yes, happy friday!
one thing i didn't mention on my blog post about travel food was breakfast. i like to take individual tupperwares with Ezekial cereal and individual soymilk sippy packages. Those don't need to be refrigerated, so even if i don't have a fridge I just open a soymilk, pour into the tupperware and have a decent breakfast!

Cassoroles do it all. I bring ground flax seed and put it on EVERYTHING when I am away from home. Rottisorie chicken make nice meals and leftovers for sandwiches too.
