Tonight, Josh is having the boys over for dinner. Since I’ve been on a Pioneer Woman (PW) kick since receiving her latest cookbook, I decided to make it a PW kind of night. I made up her BBQ Comfort Meatballs. I followed the directions up to freezing the meatballs:
But cooked them in the slow cooker (sans the flour) with double the sauce. I cooked the meatballs on low for six hours. Note: I used 93/7 beef (without pink slime thank you) and I think this made the slow cooking possible. If you use a higher fat beef, you may need to skim the fat off the top…I served them alongside cheesy mashed potatoes:
For dessert, I made her chocolate chip cookies with flax. I made a half batch:
