M: Reese’s Cupcake Bites

I’m going to jump right into these little pieces of goodness. I have recently been back on my incessant need to bake since the holidays ended. And what did I want? Well a great chocolate cupcake of course!

Not just any cupcake…an itty bitty one…one that doesn’t make me feel so bad when I eat 5 of them. (When really it’s just as bad as the regular ones, but don’t tell) I have been wanting to make these one bowl chocolate cupcakes I found from Monica’s blog for a while now.

So, that is just what I did…And yea, don’t tell this either…but it made 72. Don’t ask me where 72 of these things are going to go – more than likely to some friends and co-workers.

After the batter was mixed, I inserted quartered pieces of mini Reese’s cups into one batch of the cupcakes (spoon half of batter, insert piece of candy, spoon other half of batter on top until your tin is 2/3 full). The rest were made plain.

But it doesn’t stop there…oh no…

I found this great recipe for peanut butter frosting on Joy the Baker’s blog and thought it’d be perfect with my Reese’s cupcakes. So, that’s what half of the cooled cupcakes got topped with. The batch without the Reese’s cup inside the cupcake got a half of a Reese’s cup on top.

The other half of the cooled cupcakes got a simple cream cheese frosting piped on top.

Can I tell you how outstanding these cupcakes are? I must get rid of them asap or else all 72 will be in my belly. They are so moist and fluffy and have an incredible almost dark chocolate flavor. This peanut butter frosting is seriously decadent. I didn’t think I’d like it, but I think I like it better than the plain cream cheese frosting!

Give these a try…they are worth it. They aren’t healthy…They aren’t sugar free…They are bad…They are real bad…But they are SO good.

How is everyone’s Thursday?? I plan on heading to my favorite yoga class this morning, doing some work, and then possibly heading to a happy hour with the hubs and folks from work.

wow....I WANT one now!! lol What a great idea to incorporate the reeses with the cake and then garnish as well. You care going to make some coworkers and friends very happy!

i love that these have a reeses on top and in the middle. the one on top makes them look so fun, but you'd never suspect there'd be another in the middle!

The boy is pretty much peanut butter anything obsessed so I am going to have to give this recipe a try. I cannot believe it made 72 though!

These look delicious! They remind me of the peanut butter cookies I made and stuck mini PB cups in the middle - anything with a Reese's on top is sure to be awesome :)

mine are my cupcakes than cookies..i have all kinds of versions of them, using a brownie base, choc chip cookie dough base, diff frostings, suffice to say, i love these things :)

These look AMAAAZING! But you need to put a dieter's warning in these kinds of posts. My friend and I call it food p*rn, when you just stare and drool at food like dudes with magazines. These made me super hot...rowrrr :)
