E: Vegetarian Split Pea Soup, Revisited

Hi guys! Hope your Sunday treated you well. I had a very productive day which included: a gym session, cleaning all the bathrooms, dusting the house, tons of laundry, a little work & football. Unfortunately, both my guys were feeling pretty icky. Frank seems to have an infection in his eyes (I’m taking the little man to the vet today) and Josh has some kind of bug. Given this, I thought soup would make the perfect dinner!

I made a vegetarian version of Ina Garten’s split pea soup a while back and was totally craving it. It is so tasty, I decided it deserved a second post.  I must have used only 3 cups of vegetable broth last time, because this time the result was much more soupy! Both version are yummy though! Pre-blend:

As much as I love to home-make bread, Publix bakery fresh rolls are great in a pinch! I heated the rolls back up in the oven and placed them on top of the soup:

Anyone have anything exciting going on this week? Josh’s parents and sister are coming to visit at the end of the week!!

I've never had split pea soup but have heard it is so delicious. You can never go wrong with Ina!

That soup sounds great! And there always has to be more bread than soup, what else would you use to eat the soup? A spoon? That's crazy! :)

I've never made split pea soup before - and come to think of it don't know that I've ever had it?! But it looks good!

This week is year end close for us so it's going to be pretty much horrible - but I'm trying to keep a positive attitude since at the end of the week I have something scary/exciting going on (work related) to maybe change that for the better :)

Awesome looking soup! Such a nice wife you are. Hope Frank is okay, poor guy.

Things are picking up big time with our new business, I have brides contacting me left and right to check out our new event space! Also booked an October wedding over the weekend and have a May one just about ready to book as well!

Oh, it's been way too long since I've had split pea soup! My mom used to make it when I was a kid and it was always one of my favorites...yours looks fantastic!

souuuuup! haha i just took out all the ingredients i had on hand to throw together a pot of everything but the kitchen sink soup haha :)

hope your men are feeling better! i had a lot of things to get done today and i definitely didn't manage to get them done. major fail but whatev!

someday we will go on a double date with your hubby and your hubby's brother. haha :) but mainly it will be a date for you and me

i'm glad you posted about this, i need to try split pea soup. as a kid, i refused, but i'm sure my grown-up tastebuds would find it delicious!!

Split pea and lentil soups are my go-to recipes for feeding large crowds - always appreciate a new version!
Back to work this week for me - a new job in a new field; I'm pretty excited, and I get to spend lots of time on farms!

Oh my gosh, you were super dooper productive! I was, too, but on a much smaller scale. ;-)

I agree about store bought bread...sometimes in a pinch, it is just perfect! And, okay, I'm still scared to bake my own bread....

I want to try making split pea soup! I've only ever tried it from a can...I think I would love it more homemade :)
