E: More Green Soup

Happy Friday!! Do you have weekend plans lined up? We’re going to dinner with friends tonight & to brunch with my parents on Sunday. Other than that, I’m hoping to clean the house, walk, watch football & relax!

I seem to have a love for all green soups. I have made asparagus, spinach & potato, split pea, and parmesan pea soup. When I saw Ellie Krieger’s version of pea soup, I knew I had to give it a go! The recipe contains only a few ingredients and it is a snap to make. My adjustments: vegetable broth (instead of chicken broth), added in 1 clove of garlic (diced) and 1/8 teaspoon ground red pepper. The outcome (green soups are just NOT pretty ;)):

I served mine with toasted Arnold’s thin “croutons” and cheese. Josh had a roasted chicken, cheese & BBQ sauce sandwich on the side. We also both had fruit.

Ellie’s soup was OK. I think I will stick with split pea.

The soup looks fantastic! Robin Miller has a Roasted Asparagus soup that is AMAZING!!!

It's so funny how similar we are. I make these kind of meals all the time for myself and ALWAYS make Toly a meal just like you make for Josh. We would all be instant friends, I know!

I'm not a big green soup fan. I just can't get over the color! :)

We have plans with friends tomorrow night and Sunday I have my long run in the morning with another friend. I'm looking forward to both!

I do like green soups, but it always seems to take a little experimenting to find a flavor that I really like!

My friend tried Ellie's soup and said that it was horrible not her thing at all. After she said so she brought me over a bowl...hello like I was going to like it. I am picky and she definitely is not.

Can you believe that I tried my first green soup yesterday??? It was an Amy's Organic Split Pea. For some reason green soups sort of scared me ;-)

green soups kinda gross me out! i much prefer orange/yellow. but maybe i'll give green a try sometime.

I love green soups! I may be a little off because I really do love greens. When I was pregnant with our first daughter I ate broccoli rabe for breakfast for the first 6 months ... just because I love it! Hope you are feeling wonderful!!

This weekend I'm hoping to catch up on all the stuff I didn't get to last weekend while I was sick! House cleaning, laundry, shopping with my mom! And then the Packers game on Sunday is definitely on our schedule, will probably get together with family/friends to watch!!! Happy Friday :) :) :)

You actually inspired me to try my first split pea soup last year! It was super easy to make and I did really like it. I agree, though....they are not appealing to the eyes at all! :-)

I love green soups! But I tend to not puree them...usually I do a rough chop. I love those sandwich thins though!

I never used to like green soups - but truth be told, I never tried them, just made the assumption that they tasted like ass.

Wrong! I now love split pea soup - and the last time I made it with a smoked turkey leg in my crock pot - had I not known it was turkey I would have sworn it was ham.

And such a cheap soup too - my store sells 2 pound bag of split peas for .99 cents, and the smoked turkey leg was about $2!

anyways i'm not a fan of green soups! is that weird? i love green food but i'd rather crunch it then slurp it. but i do love your arnolds crutons!

It's freaking -10 degrees here, so my plan is to hibernate.

Hmmm, the green of the soup puts me off. But my husband makes carrot soup and I thought it looked weird and now I love it! Esp. with some sourdough bread.

I prefer the split pea soup too, it just seems to have more taste and texture. I seem to have a thing for orange coloured soups, anything with red lentils, carrots, pumpkin, chickpeas or sweet potato.

You are sure on a soup kick girly--I am loving it though! I have to admit, green soups used to creep me out a bit..kinda reminded me of slime. But once I tried some different kinds, the rest was history! Can't wait to hear about your weekend!
