Father’s Day Grilling

Happy Father’s Day to all the Dad’s out there! I had a few special “Dads” I celebrated with today. First up, Frank’s Dad! Frank got Josh some Under Armor t-shirts and helped me make him breakfast (well…he watched…ok, he slept while I cooked). Josh had requested waffles, so I used this recipe and made him up some waffles topped with syrup and bananas. He enjoyed a great breakfast in bed:

Later in the day, my Mom & Dad, Aunt, Uncle & Cousin came over for a BBQ. I had made up some granola for my Dad and had also gave him a fishing Under Armor t-shirt.

My Mom, Aunt & I split the food. I laid out some nuts and crackers & hummus for appetizers. My Aunt also made some deviled eggs:

For the meat eaters, I made up two different kinds of burgers:

1. The first contained ground beef, jalapenos, Chile powder and salsa

2. The other contained beef, Montreal steak seasoning and a little ketchup mixed in (I unfortunately didn’t get any finished pictures of them because I was busy laying the food out…when I looked up- they were gone!)

The burgers were placed on top some rolls my Aunt brought.  Topping options were pickles, tomatoes, lettuce, jalapenos, BBQ sauce & ketchup:

I also cooked up some Bush’s Vegetarian Baked beans and roasted up some corn that my Mom brought in the oven a la Averie (corn baked in the husks in the oven turn out perfect!!):

I made up my cool whip dip (cool whip + 1 single serving yogurt). The dip was served alongside some fruit my Aunt brought:

My Mom also brought an Asian Coleslaw she made and a regular coleslaw:

I made up a few quick/easy desserts. A blackberry and raspberry crisp:

I simply placed blackberries/raspberries in the bottom of a baking dish and sprinkled them with a little sweetener. For the topping I mixed ~ 2 cups oats, 1/2 stick smart balance, 1/3 cup brown sugar, 1/3 cup coconut, 1/3 cup macadamia nuts. Baked at 350 for ~25 minutes.

I also made a Weight Watchers inspired dessert (as someone in attendance has been following the weight watchers points plan). I used No Pudge Cappuccino brownie mix & mixed in 1 15-oz container pumpkin puree (instead of yogurt):

What a great Cookout! Your family does such a nice job at coming together to create a stellar BBQ! We had a cookout today too, and had very similar menus. Grilled burgers, corn, no pudge brownies! :) Haha, that's no surprise though, how did I know we would be making the same things for our dad's today? Apparently, not only do you and I have the same taste, but it looks like our dad's do too! :)

Lovely! What a wonderful celebration - and I absolutely adore the fact that Frank got his dad some Under Armour :o)

I still have yet to try those No Pudge brownies, but I always hear delicious things about them!

Ok let me get this straight...you the vegetarian made hamburgers. And were in charge of that. And your aunt who's probably not veggie, got the buns. WTF?! :)

The crisp looks great! Reminds me of how my mom made crisps, except w/ real butter not earth bal. ha!

Ok the Brownies. I have seen a version of this everywhere. Heabs lately did one w/ squash i think? and you're supposed to use pumpkin? Anyway more deets on how you liked those!

Yay for your "fancy" fruit dip! I can't wait to try it. I think Frank is probably the best helper ever! How did you like those brownies? I've seen them a million times, but I wasn't how they would turn out. Happy Father's Day to your dad and Josh!

You guys always have such a great spread of food! I think I may make that cool whip dip for a snack for the staff and I at work! We always have fresh fruit handy, so it'd be great! And I am a huge fan on No Pudge!, but haven't been able to find that flavor!

BBQs are the perfect way to celebrate Father's Day I think. That's what we did too! I love your gift idea. Homemade gifts usually mean the most - and you can't beat homemade granola!

Aw! That all looks wonderful! I really love the fruit salad and your whippy dip. I haven't seen ( anywhere here) that all natural whip cream you used before, is it online order only?

I'm sure the burgers and brownies and coleslaw were a hit too!
