V8 Soup Giveaway

Sounds like everyone is working for the weekend this week!! I ended up having to do work, work for an additional three hours last night and went to bed pretty late. As a result, I felt a little cloudy going through the work day today. When I got home, I decided a small nap was in order before heading out to teach Body Attack.

When I got back from teaching, I cooked up my favorite canned/boxed soup- V8’s Southwestern Corn!


I love, love the flavor of this soup. I added some Crowder peas (new to me=totally yummy):


to the soup and topped it with a bit of red pepper. On the side I had a broiled tortilla and an apple (I’m sure nut butter will come later ;)):


V8 recently came out with a new addition to their line of soups, Garden Vegetable Blend. I was lucky enough to get a sample of the soup along with some other fun goodies from the company including a pedometer, lunch sack, pen, and cute notebook.

I can’t wait to try the new soup and plan to do a full review later this week. Do you want to try V8’s new soup? Since things have been crazy busy around here, I wanted to check in on the longer term goals I had set for myself (updates in the parenthesis):
  • RUN: Complete at least 1 race (2 would be ideal) before December (I completed the IOP Connector 10K and Folly Beach 10 miler and am signed up for a half marathon in December with the Fitnessista- Goal MET!)
  • RUN: Run 12 straight miles by the New Year (I’ve gotten to 11 and am set to hit 12 in two weeks!)
  • GROUP FITNESS: Train to teach a new group fitness program (completed Body Pump training- Goal MET!)
  • EAT: Try at least 1 new restaurant a month (I have hit this goal every month so far!)
  • FRIENDS: Have coffee with two new people/friends by the New Year (no progress…uh oh!)
  • JOSH: Take 1 walk a week with Josh (Josh and I were doing well with this when I first set the goal but have been slacking, I hope to get back on the boat with this one…)

I love the V8 Soups! My favorite boxed soup is their butternut squash - I love that it is savory rather than sweet!

That southwestern corn chowder soup looks great!! :) I've never had crowder peas either.

My favorite boxed soup is Pacific Natural's butternut squash soup.

not to mention the ingredients are all organic too :)

I think I've tried the V8 BN squash soup before and I remember it being quite tasty. My favorite soup recipe of all time has to be RR's Pumpkin Black Bean chili. Ooooh, it's sooo amazing. I think I want to make it now.

Great job on the long term goals. Aww, Erica, I want to have coffee wtih you. Too bad the whole 300 mile distance thing is a bit of a hinderance on this happening.
Oh well, someday right!?! When you are planing to come to visit PA again? ;)

I love making random soups with whatever veggies I have around the house. I did that last night!

As for my goals, I am doing okay but definitely could do better. I still want to lose more weight and eat less processed food!

Gosh my fav soup that's hard. I like the homemade one's that include everything but the kitchen sink and I am a HUGE fan of Amy's because it's easy and I know it's healthy

My favorite V8 soup right now is the Butternut Squash one. Perfect with some cheese added, cause cheese makes everything that much better!

I am a huge fan of adding beans to boxed soups for extra protein. That combo sounds delish!

I love Imagine brand's Butternut squash soup! It's delicious on its own, or with add-ins like toast, salsa, spinach/kale, mushrooms, lemongrass, cinnamon, apples, peaches, etc.!

I absolutely LOVE V-8! When I was a little girl and in gymnastics, it was my favorite post-class drink and all of the other little kids used to make fun of me and say things like, "Eeew! Vegetable juice! Gross!"
I never let them deter me from a life with the big 8. However, I still haven't tried their soups, so I'd love to win!

I haven't tried any V8 soups. I'm usually scared of the "packaged" flavor. Maybe I should give it a try if I can find it in Europe. :)

Goals (health related ones) are tough to manage and accomplish when in college - I think it is our odd scheduling that I can never have a set time to work out.

My favorite soup of ALL TIME has to be split pea and ham. My dad makes it from the recipe off the back of the bag (can't exactly link to that) but here is a similar recipe:

I LOVE the V8 soups! I've had Butternut Squash and Southwestern Corn. Love them both. They are so good for a quick meal!!

I haven't had that flavor of V8 but the broccoli flavor is really good. Sorry to hear about your crazy day! I hope you get a TON of R&R this weekend!! If I lived near you, I'd have coffee with you, does that count?! Way to go with your goals! Especially the running one! 11 is awesome, 12 is amazing!

I have never tried the V8 soups. I will have to look for them in my grocery store this weekend. My favorite canned soup is Campbell's Creamy Tomato. I love to pair it with a grilled cheese sandwich. It's the perfect comfort food!

Congratulations on the work you've made on your goals. My goals are just to workout 3-4 times per week, eat as clean as possible, and celebrate every moment of my pregnancy!

Yum V8's tomato soup is incredible (but I would hope SO).

You have done really well with your goals! I have been trying to increase my water intake to about a gallon a day and most days I am hitting it. I pee a ton, but it's worth it.

Look at you! You are blowing through your goals left and right. That is awesome! Congrats on your race this past weekend! I'm gearing up for my first half next March.

If only we lived closer we could totally take care of that coffee with new friends one, as I've mentioned before. Well, KY is closer than Brazil so maybe we are getting there. Ha, ha!

I like homemade veggie stew.
Just cut up any veggies you want and put them in a slow cooker half way filled with broth. Let it cook on high for a day and it gets nice and thick. its amazing:)
