Baking time

I am so excited because tomorrow starts my week and a day long vacation! My parents are coming tonight and my mom will be taking one of my group fitness classes for the first time! In preparation for their visit, I made a few goodies:

Corn Muffins:

Ingredients


1 1/2 cups all-purpose flour (about 6 3/4 ounces)
3/4 cup granulated sugar
1/2 cup yellow cornmeal
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup plain low-fat yogurt (I used vanilla light and fit)
1/4 cup butter, melted
4 tablespoons fat-free milk
1 large egg, lightly beaten
2 tablespoons turbinado sugar (optional)

Preparation

Preheat oven to 375°.

Lightly spoon flour into dry measuring cups; level with a knife.
Combine flour, granulated sugar, cornmeal, baking powder, and salt in
a medium bowl, stirring with a whisk. Make a well in center of
mixture. Combine yogurt, melted butter, milk, and egg, stirring with a
whisk; add to flour mixture, stirring just until moist.

Place 12 paper muffin cup liners in muffin cups. Divide the batter
evenly among cups. Sprinkle batter evenly with turbinado sugar, if
desired. Bake at 375° for 20 minutes or until a wooden pick inserted
in center comes out clean. Cool on a wire rack.

Next I made Sarah's granola. This time I used sugar free maple syrup and it turned out awesome!
For dinner I made eggs, oven roasted potatoes and I cut up some fruit. Here is a picture of Josh's plate (I added spinach and cheese to his eggs):

I also pre-made a batch of the manicotti I posted about here for dinner tomorrow night!

I LOVE corn muffins - my absolute favorite! Thanks for the recipe :o)

Eggs for dinner is always a great, easy way to get in some flavor and protein. It's my go-to when I don't want to spend too much time in the kitchen, haha.

Are you going anywhere during your vacation time? Have fun with your parents, you are smart to bake in advance to have treats around.

I love the sugar-free maple syrup idea! I don't know that I've ever seen sugar-free real maple syrup, but I'm on the hunt for it now!

In my last few batches, I've been adding maple extract to enhance the mapley flavor. I recommend to you!

VG- You've got to make the granola! It is awesome to have for yogurt or just by itself! Awesome awesome! I can't thank Sarah for it enough!

Jenn- the corn muffins actually turned out pretty well, very moist! I was sort of scared about baking with yogurt! Eggs are the best! cheap, lots of protein, how can you go wrong?

Sarah- We are going to Hilton Head, South Carolina, I can't wait! I like baking ahead of time and just leaving things on the counter! I hate being at someones house and feeling hungry but like you can't eat anything! Thanks for the tip! I will def try it!

Those corn muffins look great. I have been doing my share of baking recently, including cornbread and other corn products. But yummy on your muffins!

First of all, Frank is the cutest thing ever! Second, I've always wanted to make eggs for dinner because I love them so much but I've just never done it. Your post inspired me to make it happen. Everything looks sooo good! ;)
