Vegetable Enchiladas & Ranch Spring Stir Fry

This week and upcoming weekend are packed full! BUT, there is always time for delicious eats :)

Monday night, I made up vegetable enchiladas using Kelly’s recipe as my starting point. Kelly’s enchilada sauce is totally delicious and I don’t think I will ever be able to go back to the store bought version.

For my vegetables, I used yellow summer squash, peas, jalapenos (from our garden!) & corn. I left my enchiladas vegetable, and added the leftover cilantro lime rice and meatballs to Josh’s enchiladas.

These were so delicious! I will definitely be making them again. Thanks Kelly!

Tuesday night, I decided to make a different kind of stir fry. I roasted up asparagus and yellow squash.

Next, I cooked up ground turkey in a little bit of olive oil. Once cooked through, I added in the vegetables and a third a packet of Lay’s Country Ranch dip creations seasoning mix (disclaimer: sample came for free through the the Foodbuzz Tastemaker Program).

Today, I am headed to the gym for an early AM workout (walk/jog & Body Pump). After, I have work and a baby doctors appointment. What are you up to?

I need to try that homemade enchilada sauce recipe. Looks great girl. Hope you have a fantastic workout! I went to pump it this morning, did a barbell warm up for the class then worked my muscles!
