Blogger Inspired Meals

You may notice something missing from my blog title, the E:. You may have also noticed someone missing from the blog- Ms. Mandi! She has had a ridiculously busy last few weeks and has a lot going on work wise/life wise. Given this, she will be doing some guest posts every now and again and hopes to come back to regular blogging eventually. She misses you all and will be sure to check back in with you soon.

This week seemed to get out of control busy real fast. Luckily, I’ve been able to reach out and find some great, easy dinners through the blog world. First up, Monday night I decided it was finally time to use one of my samples from Lay’s and Tostitos® Dip Creations™ (disclaimer: samples came for free through the the Foodbuzz Tastemaker Program). When I saw the Ranch seasoning packet, I instantly thought turkey burgers.

A quick Google search revealed that I was not the only blogger who had this thought. I used Amy’s recipe for Country Ranch Burgers, making mini burgers for me and a larger burger for Josh with cheddar mixed in. 

My mini burgers on top of a salad (note: Josh got home a little later the night I made this and I was nibbling the toppings off this salad so it looks a little sad….thats what happens when you’re preggers and hungry ;)).

My MIL also came to stay with us to do a few things in the area for the second part of the week. I threw together a batch of Maria’s Chocolate Chip muffins with just a couple changes: 1. I used unsweetened almond milk instead of buttermilk and 2. I made mini muffins vs. full sized muffins (I baked them for 14 minutes). They are nice and soft on the inside with a little crunch on the outside. IMG_1993

And last, a big thank you to Sarah for all of the adorable gifties! She sent us quite a few outfits, diapers, bows, shoes & granola bars! My favorites, the turkey onesie (she will be rocking this on Thanksgiving):
