Mosaic & A Pasta Bake

PHEW! It has been one of those weeks. How about for you? Josh is healing, but we found out his ankle is actually broken versus just sprained. He has been a trooper and I have been a pretty sweet nurse, if I do say so myself. A few exciting things in this post: 1. A pasta bake, 2. Blogger Meet-up at Mosaic, 3. Giveaway winner.

Since I knew I would be attending a blogger meet-up, I wanted to make sure my patient still had a delicious meal for dinner.

  • I baked up a piece of chicken in some Italian spices
  • The chicken was then sliced thin (almost shredded) and mixed with cooked pasta, pasta sauce, hot sauce, ricotta, parmesan cheese and artichoke pieces
  • On top of the mixture, I placed some additional grated parmesan and Italian bread crumbs
  • The mix was baked at 375 for 20 minutes and then placed under the broiler for ~2 minutes

While Josh ate this bake, I headed to Mosaic (one of Lindsay’s favorite restaurants) to meet up with Lindsay, Amelia, Blair, Christina, Katie & Kerr. I love the atmosphere at Mosaic and all of the fresh, local food options.

And, Amelia brought us AMAZING treats!Granola, cookies & grown up smores. As I’ve mentioned before, Amelia is a trained pastry chef and everything she makes seems to be delicious  Josh and I already sampled the Smores….oh my goodness- so good!:

girl how in the hell did they not know it was broken and thought it was sprained?! i guess that could probably happen but my god, that's awful!! he could have really been injuring himself permanently!

as the nurse, i am sure youve had a longgggg week too!

Poor Josh! I hope he heals soon. I've never broken a bone before so I can't even imagine what that's like.

We have a Mosaic too (looks like there are just a handful of locations though so lucky us!) and I adore that place! Haven't been in a while and I think I need to change that ASAP!

So sorry about your husbands ankle! Sounds like you are taking very good care of him :) I've never been to Mosaic- it looks very cool, I will have to add it to my list!

ALso, I have my gym bag already packed for Step/Pump tonight! It has been 3 weeks since I've been to a class- yikes! Keeping my fingers crossed that I get out of work before 6 :) If you're teaching, I will see you there!

Oh poor Josh, tell him to hang in there! Hopefully it'll heal up just fine. The pasta bake sounds good--I haven't made one in forever, but I like making a buffalo chicken bake..mmmm!

You ARE a good nurse! Poor Josh, but he's clearly very well taken care of. The baked pasta dish is a wonderful idea for an easy but scrumptious dinner.

I'm so jealous of your blogger meet-up! I don't know any bloggers living nearby. Mosaic does look pretty swank, perfect place for foodies to meet

So sorry to hear the ankle is worse than you thought. That's awful! I hope he heals quick. Although, if you keep making those yummy pastas he may stay bedridden!! (j/k I know you cook for him even when he's well!)
