Crock Pot/Baked Meatballs

This long weekend has been exactly what I was needing! The weather has been incredible and I have had a lot of time to simply relax. Frank enjoyed a lot of relaxing:

Saturday was spent as follows:

  • Taught Body Step (Lindsay has been coming to some of my classes which has been so much fun)
  • Brunch with Josh (I got a blueberry parfait-sorry Dawn ;))
  • Lounged in the sun
  • Housework
  • Laid down grass seed
  • Walked with Josh (2.4 miles, he isn’t allowed to do a lot of physical activity (given the elbow surgery), so it was nice to get out and moving with him)
  • Dinner, movie & ice cream at home

I had picked up some local grass fed beef at the farmers market a couple weeks ago and finally defrosted it for use. I used the beef to make some Crock Pot/Baked Meatballs:

Ingredients
1 lb ground beef
1/4 cup panko (or regular bread crumbs)
1/4 cup grated Parmesan cheese
3 tablespoons tomato sauce (or marinara)
desired amount chopped onion

1 bottle marinara sauce (or you can make your own)
Directions
Preheat oven to 375
Mix all ingredients. Form into small balls (~25) and bake for ~15-18 minutes or until cooked through.

I baked mine on a cooling wrack on top of a baking sheet sprayed with pan. This allows some of the fat to drain out of the meatballs.

Next, place bottle of marinara in the bottom of a crock pot. Add cooked meatballs. Turn crock pot on low and cook meatballs for 4-6 hours.

In total dinner included meatballs (for Josh), giant salads, and great harvest bread:

We also had some ice cream with blackberries for dessert (YUM). Josh’s beautiful meatball bowl:

So far today I have enjoyed some coffee and cooking/baking. I made up a loaf of banana bread for a friend’s mom who did a few wonderful favors for me.

I also made Josh a slammin parfait for breakfast. The parfait contained yogurt, Galaxy granola (new flavor-maple pecan quinoa) and blackberries.

Josh really liked the new granola. He said it was a totally unique flavor and loved the addition of quinoa. I think if I were to win the lottery, I would open a little breakfast shop of my own! What would you do if you won the lotto?

If I won the lotto, I'd be headed straight for a vacation in Italy. And then... I don't know. I can think of lots of things that might be nice, but really I'm pretty happy with my life and wouldn't want to change much. Maybe pay off the house....

I just picked up some fresh blackberries at the farmers market yesterday! Guess I know what I'm having for breakfast tomorrow. :)

Lotto winnings: Pay off student loans, buy my parents land and a pimped-out log cabin (my Dad's dream home, with all the luxuries for Momma), throw whatever I don't need into savings, and travel every square inch of the world. First stop: Tibet.

What a gorgeous parfait! I love the idea of a breakfast shop- I'll be a loyal customer if I am ever in the area! :D If I won the lotto, I would travel all over the US.

I'm pretty sure your parfaits could give the cafe a run for their money! If I won the lottery I'd buy this gorgeous old house in our neighborhood and open a bakery!

Way to go making meatballs (as a vegetarian!)

I made scott a thanksgiving turkey but i dont think i would have an easy time rolling raw ground beef. Props to you girl!

If i won the lottery I would buy a vineyard in the south of france and grow champagne grapes while I jetted between there and morea or the south pacific, fiji, etc and lived in an overwater bungalow.

they say money cant buy happiness....maybe so, but it would sure be fun to try!

Oh how I wish there was a Great Harvest near me! All your eats looks so yum, especially that parfait! I love yogurt + granola... but who doesn't?? ;)

If I won the lotto, I would pay off some college debt for sure and take a niiice vacation...

That parfait looks deeelicious! Josh is one lucky guy! If I won the lotto I would help my mom open a bed and breakfast because that has always been her dream! And of course I would make sure semi-healthy food was served there... =P

I would open a "healthy" bakery with all the nutritional information posted for each item. I would LOVE to know how many calories and fat are in cupcakery cupcakes!! Ok, maybe not...... :)

I think it's really great how you cook/work with meat for Josh. I don't think a lot of vegetarian's would do this? I could be wrong.

Wow, sounds like the perfect weekend! Packed with good meals, fun, and relaxation! I love the meatball recipe- I'm going to have to give those a try, I bet they're unbelievably moist and flavorful from the slow cooking!

Hmmm...if I won the lotto I would 1. quit my job and do volunteer work with little kids that involved fitness, 2. take my friends and family on a vacation....maybe to Hawaii?, and 3. go to Italy!

Hmm lotto winnings...Buy a house and a second house in Cali on the beach. Give my family and friends money. Give money to a charity I have researched. And do some retail therapy ;)
