Kinda Sorta Mexican-ish

Happy Cinco de Mayo! Is your week going well so far? Mine has been great! Since I taught this morning, I was free tonight to do some celebrating. Josh & I, our friends Mandi & Bryan, and Lindsay & P went out to the wonderful Gringos for dinner.

This is one of our favorite quick dinner spots. They have great, fresh Mexican-ish food with lots of healthy options. Oh and they now have beer now(this sign was too funny/cute not to take a picture of):

I ordered up a salad with black beans, grilled onions and peppers, salsa, cucumbers and guac:


Josh couldn't wait to dig into his TWO burritos and chips and salsa:

It was a wonderful Cinco de Mayo! Did ya'll celebrate?

There is little better than a big pile of guac on top of Mexican goodies. :)

I am lame and had my Mexican dish last night. I feel into the Cinco No Mayo pool!

I had fish tacos! You'd love them--homemade tilapia with onions, red and green peppers, sauteed until blackened, not fried, with a bit of queso blanco and black beans and spinach on the side! A lot of people do chipolte and cabbage, but I have this amazing local salsa full of veggies--it's Mexican food, the healthy duckie way!

Awww, yay for celebrating Cino de Mayo with good food and friends! :) I can't wait to celebrate the day with some Chipotle on Friday!!!! I had to hold out for Chipotle! :)

Your salad looks delicious! And I love the look on Josh's face hahaha. Sadly no celebrating for me since I had to tutor/do yoga tonight. I plan to have an extra Corona this weekend to make up for it!

i know you've been blogging awhile and you probably have gotten them just b/c of your duration/career as a blogger but your blog is so safe, and friendly and kind, it would also be shocking if you did get them. you would never ever deserve that crap!

LOL I love their tag line! That cracked me up. And no I didn't celebrate - I totally spaced on the Cinco de Mayo thing. Oh well, maybe fried rice can be kinda sorta Mexican-ish too. ;)

I celebrated with corn chips and salsa, but guac would have made my day a million times better!

Kinda sorta Mexican-ish haha I love it! We celebrated a friend's birthday at an Italian place... Guess I'll have to celebrate Cinco de Mayo this weekend!

Did not celebrate, didn't know it was cinco...day. Don't know what it is...is that bad? I guess since our proximity to Mexico is not close, we don't celebrate.

Fun dinner! My friend and I were all set to celebrate, but decided on a French bistro instead. We're planning on having "Cinco de Mayo" next week instead!

That looks like a great dinner! Yay for guac! Though I am a burrito gal, all the way! No celebrations here- would you believe that there is only one Mexican restaurant here? I am celebrating this weekend- most likely with an Amy's burrito. Does that count? I'll throw in a margarita too :P

Oh how fun!! I wish we had celebrated with mexican food, but we had to go out for a friend's 30th birthday at a french restaurant. And you would think that it wouldn't have been busy on cinco de mayo... it was packed, go figure! ;)

Haha I really didn't even acknowledge Cinco de Mayo I guess... when I used to work downtown we'd go out for Coronas or something but these days I forget what day it is half the time and no one drink Corona at the yoga studio... :-)

I think guac is one of my favorite foods ever. My Cinco was pretty calm. Went for a run and hung out at home with my wife.

Your salad looks awesome, I had a similar ine for Cinco de Mayo as well. Salads with tons of guac and black beans - perfect filling combo IMO!

Delish salad! I love healthy Mexican food, it's not always so easy to find. Great tacos are easy to find here, lots of little authentic taquerias in Redwood City which is just south, but more yummy/splurgy than healthy.
Chipotle is a fresh chain (do you have them in SC?), and I can get a salad similar to yours there.

We didn't do anything for Cinco de Mayo this year, I think it was a Tuesday or Wednesday? Tough day.
