Cauliflower Pizza Crust & MIA

First things first, HAPPY MOTHER'S DAY to all the Mama's out there (especially my Mom and MIL!). Excuse my absence! Josh got sick Thursday and then we took a quick trip up to our old stomping grounds (Penn State) to watch Josh's brother graduate from his MBA program.

Prior to leaving, I did get a chance to try a new recipe, Julie's Cauliflower Pizza Crust. I saw Em make it and couldn't wait to give it a go. I followed Julie's recipe (for the most part) but used 1/4 cup egg beaters (instead of an egg) and 3/4 cup part skim mozzarella cheese (vs. 1 cup). Raw cauliflower:

Cooked, riced, mixed with egg beaters and cheese:

I then added some of this fun spice mix:

Baked, topped, broiled. Josh's topping was prosciutto, cheese and artichokes (post baking):

Mine was cheese, peppers and onions (pre baking):

No way! Had no idea cauliflower could be used for a pizza crust, that might actually get me to buy another huge head of it. Thanks so much :D Over here in the NW, Mother's Day festivities haven't started yet. But I'm hoping to throw a big bbq for me mami, and I'm uber excited to introduce homemade cocoa bars + homemade frozen yogurt to the family. Oh blog land, all the things I've learned.

Wow. Had no idea cauliflower could be that versatile. I turned my wife onto it and now she can't get enough of it. And your dog looks so awesome, bet you two have lots of fun.

I spent the morning running and then making snippy comments at the TV and laughing with my mother, just the usual. Then me and my wife went over to her mother's and had dinner with some "mother-friends"

I love the idea of that cauliflower pizza!....can you rice it in a food processor?!

When I finally get a food processor, that'll be one of the first things I make! It looks just as good (if not better?) than a real crust, yummmm.

Ok the cauliflower pizza crust looks awesome! What a great way to get more veggies. I have already tried the faux mashed potatoes, made with cauliflower and I have heard of risotto, but never pizza crust. I will give this one a try some time.

We had the moms & families over for brunch yesterday. It was nice, I made a couple types of frittata, scones, toast and fruit salad.

It's fun to return the favor and cook for her, but I think secretly now that there are no more kids at home she kinda likes having me around to cook for every so often. ;)

What an interesting pizza crust! Just when I thought I had run out of ways to use cauliflower. It sounds really good.

Hope you had a good time at Penn State. We went there once for a wedding, but didn't get a chance to look around campus. I'd like to go back sometime. It seemed like a cool college town.

This is SOOO interesting! Gah, I'm so behind!! I am bookmarking this and the original, very interested in trying it. This could make a yummy lunch- I wouldn't allow myself pizza for lunch ever, but a cauliflower crust is such a delicious concept, much healthier than the doughy, gooey pizza I love on weekend nights :)
