Peanut Veggies/Noodles/Fruit

Thank you for all of the lovely comments on the interview! You guys are too sweet.

Was it me, or did today feel like Wednesday? After work, I did the usual run around at home which involved laundry, a walk with Frank:

...dinner prep, and then out the door to teach Body Attack. Since Josh has a dinner meeting tonight, I just had to get my dinner prepared. I was contemplating all day what I wanted, but knew it needed to involve peppers since I have 5 sitting in the fridge. I decided to go with a slimmed down version of Rachel Ray's Hot and Cold Sesame Noodles:

Ingredients
1 large apple chopped
1/4 cup whole wheat pasta cooked
1 pepper chopped
1 serving broccoli/broccoli slaw
1 tablespoon naturally more peanut butter (or brand of choice)
1 tablespoon reduced sodium soy sauce
1 teaspoon hot sauce
1 teaspoon rice vinegar

Directions
With a whisk, mix together peanut butter, soy sauce, hot sauce and rice vinegar. Toss cooked (but cooled) pasta, vegetables, and apple in sauce mixture. Enjoy or put in the refrigerator to enjoy later- this allows the vegetables to really absorb the sauce (I think it makes the dish extra tasty and is perfect for me on the nights I teach!).

Oh, Frank. You are too adorable.

We are going to have soup and grilled cheese. It is just that kind of day here in Minneapolis.

However, your peanut pasta salad is tempting to make instead...

Dinner tonight was a kicked up Grilled Cheese and Tomato soup, but here is a BIG surprise....

I have Peanut Noodles and Stir Fried veggies on the menu this week! It's really not even ironic anymore, i just kind of except it now. ;)

Those sesame noodles look delicious! I love the flavor combination of apples with peanut butter, so I can imagine how good this dish probably was.

First off, thanks again for the advice! I had a little trial session today during the largest spin classes at the gym for about 10 min, and I did great (or at least that is what the head instructor said)! I'm still a little nervous, but I'm sure that it will fade with time. My guru keeps telling me that I have almost 7 years of solid riding experience (indoors/outdoors), and that I should not be scared! :)

As for dinner, we had baked chicken sliced over some leftover couscous with grapes, nuts, and avocados mixed in over a bed of mixed greens with a lemon/olive oil dressing drizzled over. Amazing!!

That noodle dish you made sounds stellar!! I like that there were only a few ingredients for the dressing. I bet it would also make a good marinade for tofu.
