Gluten Free, Crustless Pumpkin Pie

Thank you (again) for all of the wonderful wishes on my first Body Pump tracks. My tracks went really well! I only fudged a little and did a good job poking fun at my own mistakes!!

Today has been go go go! Fridays are one of my flexible work days, so my day went a little something like this:
  • Woke up at 5:45, freezing. Turned on fake fireplace:


  • Did some work
  • Gave Frank a bath. Wrapped him up like a burrito so he would stay warm after his bath:

  • 45 minute spin class
  • Telecon for Work #1
  • Showered, updated choreography for Step next week
  • Telecon for Work #2
  • Drove into Charleston to pickup my race number and shirt for tomorrows 10 miler:



  • Updated choreography for Body Attack next week
  • Dinner date with Josh at Moe’s. I got the personal trainer salad with black beans, onions, peppers, salsa, cucumber, jalapenos and sour cream (sorry for the dark picture):

  • Joshers got a chicken burrito with chips and cheese dip (isn't he a cutie?):

  • Then Josh took me to Whole Foods (hooray) where we picked up some fun stuff including this:

I love Cool Whip but hate all of the artificial ingredients. I cannot wait to try this more natural version:



Now I'm about to cuddle up with Josh and get some sleep for my race tomorrow (ahhhh!). How was your Friday?

I'd like to try that tru-whip. I constantly see fun dessert recipes that call for Cool Whip, but don't make them because of all the funky ingredients.

AH! Tru Whip!! I am so addicted to this stuff. Really, it's worth every penny.

Oh my goodness!! Love the Frank burrito :) That is the cutest!!

I haven't tried Tru Whip... I always see it as Whole Foods but always been afraid to pick it up, in case I don't like it!!! Please let us know what you think :)

Had a good Friday... got a walk in with Heather (HEABS!) at lunch... and now I am lounging on the couch... trying to find some new work out videos to order and also a cupcake recipe for my friends birthday tomorrow... great combo, huh?

Im so jealous of your all inclusive trip in the spring.. how fun!! Whats better than being waited on hand and foot and eating till your hearts content? lol

Holy heaven! It's pretty dangerous that you just introduced me to "tru whip" - I see a lot of containers in my future! I'm so happy they came out with something like cool whip without the artificial ingredients!

I love Frank wrapped up like a burrito :o) Good luck with the 10-miler tomorrow - you're going to rock it! And enjoy that pumpkin pie, too ;o) It looks amazing!

Oh I've had that Tru Whip! I loved it, but my dad (the true Cool Whip connoisseurs did not care for it at all! I hope you like it as much as I did.

i made a GF pumpkin pie, no bake, too! posted it about 2 weeks ago.

And tru whip..
Girl, save your moola. Soak 1c cashews, drizzle about 1/4 c agave and blend the heck out of it in a food processor or vita til it's whippy. Tastes BETTER Than cool whip. Vegan, GF, 100% natural. And easy!

But I'd like a slice of your pumpk pie!!!!

That pumpkin pie looks wonderful!! Especially since my husband has celiac disease... I will definitely have to check that recipe out! I love cool whip, so would love to try out that Tru Whip. I'll have to look for it.

walmart is the spawn of satan but it's a gold mine for buying gum and popcorn kernels so I feel you girl!

I hate errands that involve walmart too. ugh is right.
and thank you for that post on the tru-whip...I must try that. I love my berries with some whip, but hate cool whip as it's all a chemical-nightmare.

I have never even heard of Tru Whip! Oh, I must check that out. I have banned Cool Whip in my house. Mr. GFE and Son are not happy. I haven't broken the news to my extended family yet, so having a great alternative would be good. I had planned on just making a gf/df ice cream for topping (and still might), but Tru Whip sounds good.

I'm so tickled you made my crustless pumpkin pie. Pam is a real sweetheart, isn't she? Looks like your pie came out great! Hope everyone enjoys it. :-)

I hope you top that pumpkin pie with the cool whip! If so, that is my traditional Thanksgiving dessert. We make a bowl full of baked pumpkin - no crust needed :D

Ha! Your "fake fireplace" cracked me up. I have to agree with some other commenters. I love them fake or real. They are one of my fave things about the cooler months. That pie looks great! I need to try something different like that.
