Black Bean Soup- Two Ways

Hello! I have no idea how it is already 7 pm! Where did the day go? I had another comp day today and was VERY excited about it. I started my day off with some house cleaning and then ran out to get my hair done (such a great treat). I came home, downed some lunch, and ran out to finish up my Christmas shopping for Josh's family. I also got to pick Josh up from the airport!! He has been on a business trip all week and I missed him dearly (and so did Franky).

We did some relaxing at home and then I threw together my favorite black bean soup. I served Josh's soup with cheese quesadillas:

And dumped mine on top of a giant salad (in an attempt to lessen the mass amount of produce we have in our vegetable drawer):

Delicious! We're laying low tonight, watching movies & doing laundry. I have to get up early tomorrow to teach Body Step and Body Pump! What are you up to?

There is just something about Friday that makes it fly by! If only Mondays were like that... :)

This is really random, but did you have a hard time finding a hair salon when you moved to Charleston? I love getting my hair done, but it took me over a year to find a salon that I really liked!

Good use of the soup! Cannot believe you have to have some of your shopping done already....um I haven't really thought about Christmas presents yet.

Tonight we did drinks after work and then dinner with friends... I was tired so headed home, but the hubby is still out. Cannot wait for tomorrow headed to Boston for Afternoon Tea with the ladies!

I'm workin tonight (like always) but I love nights in, they are the best. Your dinner looks good. One of my favorite things to eat is black beans mixed with rotel(tomatoes and chilis) on top of baby spinach. So yummy!
