Prosciutto & Artichoke Pizza, Cinco De Mayo Food

Happy Cinco De Mayo everyone! Hope you had a nice day. Before getting to our Cinco De Mayo dinner, I wanted to post a picture of the pizza I made for Josh last night. If you've been reading my blog for a while, and read this restaurant review in particular, you will know that Josh is a HUGE fan of artichoke and prosciutto pizza! For some reason, I have never made it at home...until last night! I made up a big batch of white whole wheat pizza dough and topped it with a little pizza sauce, mozzarella, artichoke and prosciutto. I then baked the pizza at 400 degrees for about 15 minutes. Josh said it turned out well! I opted for a ginormous salad instead :)

Today was a busy day! After work, I cleaned, prepped dinner and then headed out to teach Body Step. One of Josh's friends was joining us for a fiesta, so I laid out some black bean dip and salsa/chips for them to snack on while I taught.
For dinner, I cooked up some flank steak:


And made up another batch of refried beans:


For Josh and his friend, I made flautas with inspiration from this recipe. I topped tortillas with mixed shredded cheese:

And then steak:

I also added tons of corn. I rolled them up, sprayed them with olive oil cooking spray and baked for 10 minutes. I then flipped them over and baked for another 10 minutes. I made myself a vegetarian version with just cheese, black beans, and corn. Here is a pic of Josh's plate:


They turned out crispy and delicious! The boys topped theirs with taco sauce. I topped mine with a little salsa and had a side salad filled with bell peppers. Very yummy! Did you do anything special to celebrate cinco de mayo?

That black bean dip looks delicious! Our cinco de mayo plans were to make homemade spanish rice and "refried" beans, but I apparently never checked my cupboards to see if I had brown rice and pinto beans - and I didn't!

Glad you had a fun dinner! I went running after work and then made some Mexican food for the fam. It was buffet style with whole wheat tortillas, fajita veggies, avocado, cilantro, limes, salsa, lettuce, black beans, etc. I made a big salad, some made burritos or quesidillas. It was fun!

Those look fabulous! I bet the steak was delicious. The pizza looks great too - and I don't even like artichokes.

I don't think I've ever seen a pizza with proscuitto & artichoke on it! I bet it's delicious -- you are such a good wife! :)

Feliz Cinco de Mayo (which I think is technically almost over) I just went out with friends, but I could go for some pizza. We drank more than we ate ;)

I LOVE prosciutto! I never thought to put it on pizza. It sounds delish!

No Cinco De Mayo celebration for me...but maybe that is good! Me + chips + salsa = disaster. ;-)

and maybe a shot of tequila

but I did get the veggie fajitas (no cheese, sour cream, or butter) and it was delish! the mushroom looked like chicken - I almost sent it back - d'oh!

What a great Cinco de Mayo feast! You are such an amazing cook!! I haven't had Mexican in so long but it's always a winner with my stomach :)

I didn't celebrate cinco de mayo, but my parents did! they went to a mexi restaurant adn i stayed home!
